    • Sugar Free Yellow Cake Mix . It is recommended that you use a 16 oz cake mix to keep the ingredients in balance. My cakes were made with Moist Supreme Mix.
    • Sugar Free Strawberry Jello . This adds color and flavor to your cookies.
    • Flour. Adding all purpose flour gives the cookies additional structure to hold the filling in place.
    • Eggs. Use room temperature eggs for optimal blending.
    • Milk. Also at room temperature, the milk adds moisture to the cakes. Whole milk is recommended for the best moisture.
    • Butter. Your butter should be melted and cooled to room temperature. If you are using unsalted butter you can add a half teaspoon of salt to your dry ingredients.
    • Strawberry Extract. Adds a bit of extra flavor. You can alternatively use vanilla extract if you want a nice balance of flavors.

    For the filling.

    • Flour. All purpose flour adds structure to the filling so that it can hold its shape.
    • Milk. Again, whole milk is recommended.
    • Shortening. While an animal-based shortening will give the filling a great structure, you can alternatively use a vegetable based shortening.
    • Sugar Alternative. Use a granular alternative that measures like sugar.
    • Vanilla Extract. A clear extract will keep the filling white. You can choose to use strawberry extract for flavor.
    • Optional, sliced strawberries for decoration.

    Tips for making the best whoopie pies.

    When making the cookie portion, is is best to use a cookie scoop to scoop out the dough. This will ensure that the cookies are the same size, which is essential for making pie sandwiches.

    1. If you can find sugar free strawberry cake mix to make this recipe, you can omit the jello. Just make sure that you are using a mix that weights around 16 ounces to keep your ingredients in balance.
    2. It is recommended that you use a stand mixer fitted with the whisk attachment when you make the filling. Using a stand mixer is best for this step as it allows for a higher mixing speed which will ensure a smooth, creamy filling that is whipped and doubled in size.
    3. Some bakers like to refrigerate the cookies before assembling cookie sandwiches. In this recipe you should however, cool the cookies to room temperature instead .
    4. As a reminder, you only need the cake mix to make these pies. You do not need the added ingredients to actually make the cake.
    5. Your assembled whoopie pies should be wrapper or placed in an airtight container if you are going to refrigerate them for more than a couple of hours. Refrigerated pies are best when allowed to get to room temperature before serving.
    6. Refrigerating your assembled pies for longer than a day can affect the consistency of the filling. The pies will still taste good and can still be enjoyed.

    How to make Sugar Free Strawberry Whoopie Pies.

    Prep Time: 15 minutes.
    Bake Time: 11 minutes .
    Servings: 14 pies.


    1. Preheat your oven to 350 and prep your baking sheets with parchment paper.
    2. Place your cake mix, dry jello mix, and flour into a large mixing bowl and use a whisk or a fork to break up any lumps while blending together the ingredients. Then make a well in the center of the ingredients.
    3. In a medium bowl, combine together the milk, melted and cooled butter, and the four eggs. Pour the combined ingredients into the well that you made in the dry ingredients in the other bowl. Use a rubber spatula to mix or fold the ingredients until just combined, scraping down the sides of the bowl as needed. The batter should be thicker than a standard cake batter as the cookies will need to hold their shape.
    4. Use a 1.5 tablespoon scoop to scoop out the cookie dough and place the cookies on to your prepared baking sheets about an inch apart from one another. Then flip the scoop over and use the backside to gently press the center tops of the cookies in so that a dome does not form. You may need to make the cookies in batches depending on the size of your oven and baking sheets.
    5. Bake the cookies for 9-11 minutes or until the cookies are baked through (they will be red so it will be hard to check for browning).
    6. Let the cookies sit on the baking sheet for a couple of minutes to set before transferring them to a wire rack to fully cool.
    7. To make the filling, start by constantly whisking together the flour and milk in a small saucepan on medium-low heat until it becomes thick like paste (four to six minutes). Remove the mixture from the heat, break up any lumps using your whisk, and allow the mixture to cool to room temperature.
    8. Next, in a mixing bowl with a mixer outfitted with a whisk attachment, mix together the shortening and sugar alternative until combined (about a minute). Then scrape down the sides of the bowl.
    9. Add the cooled ingredients that you heated on the stove, along with the extract, to the mixing bowl. Beat the ingredients on high speed until they are light and doubled in size (eight-10 minutes) stopping to scrape down the sides of the bowl about halfway. You can also fold in the optional sliced strawberries.
    10. Transfer the filling to a piping bag (a star tip was used on my pies).
    11. Place half of the cooled cookies, bottom side up, on to a workspace, such as a clean baking sheet lined with parchment paper. Then place a dollop or pipe filling on top of each cookie.
    12. Gently press the empty cookies on top of the filling with the top side of the empty cookie facing you. Then refrigerate the cookies for a half hour to set.

    Expert Tip๐Ÿ‘‰ Don't have a piping bag? You can probably use a tablespoon to drop dollops on to your cookies to make the assembled pies.

    How to store Whoopie Pies made without Sugar.

    These whoopie pies are best enjoyed fresh. Leftover whoopie pies should be wrapped individually or place in an airtight container and refrigerated for up to a few days. While freezing assembled pies is not recommended, you can freeze the cookies and assemble the pies with fresh filling later on.
