    1. Prepare. Preheat your oven to 350f. Prep your baking pan with parchment paper that overhangs the sides of the pan. Grease or spray the parchment paper with nonstick.
    2. Dry ingredients. In a medium bowl, use a whisk to combine together the flour, baking powder, and salt.
    3. Wet ingredients. In a large mixing bowl beat together the eggs and vanilla extract until creamy. Then stir in the melted butter.
    4. Combine. Add the dry ingredients from the first bowl to the large mixing bowl and mix until just combined. Then transfer the ingredients to your prepared baking pan.
    5. Jam. Lightly tap the bottom of the baking pan on your countertop to assure that the batter is evenly distributes and to remove any air bubbles. Then use a spoon to drop large dollops of preserves of the batter. Using a butter knife or the backside of the spoon, swirl the preserves over the batter in a random design (does not need to be evenly coated over the batter).
    6. Bake. Bake the cake for 20-25 minutes, until the top is lightly golden browned and the center of the cake appears to be set.
    7. Cool Allow the cake to cool for 10 minutes, then use the sides of the parchment to remove the cake from the pan. When the cake is set you can slice and serve it.

    Tips for making the best Buttery Jam Cake.

    Strawberry preserves tend to work better than jam in this recipe when it comes to sugar free versions. This is because sugar free jams tend to be more watery as sugar is not used to thicken them, which can result in your cake can have a 'rubbery texture'.

    More helpful tips for you.

    1. The melted butter needs to be 'cool to touch' before adding it the eggs. If the melted butter is too warm it can end up scrambling the eggs instead of combining with them.
    2. When combining the wet and dry ingredients, mix the ingredients until just combined. Overmixing can overwork the gluten in the flour leading to a texture that is more chewy and dense. You want a texture that resembles a mix between a coffee cake and a gooey butter cake in this recipe.
    3. Because of the crumb or texture of this cake, I find that using a serrated knife works best when slicing this cake into servings.

    FAQ

    • Can jam be too thick to use in this recipe? If your jam seems thick and it is still fresh (date is current on the jar) try using a small whisk or fork to to stir it up to a good texture that will allow you to spread it over the batter.
    • Can I still use a regular jam made with sugar? Using a 'regular' jam will not make this recipe totally 'sugar free', just low in sugar. However, since this recipe is made without added sugar the jam with sugar will add sweetness and moisture to the cake.
    • Do I need to frost this jam cake? This cake is meant to be served without frosting. You can however serve it with whipped cream on the side.

    Variations.

    • My cake was made with strawberry preserves. Feel free to use another preserve or jam such as blueberry or raspberry.
    • For a 'strawberry lemon' you can add lemon zest (two tsp or so) or lemon juice (one to two tbsp).
    • To make this into a strawberry and cream cake, simply drop spoonfuls of softened cream cheese onto the top of the batter before baking and use a knife to swirl it into the jam .

    How to store snack cake.

    Once the cake has fully cooled it can be stored in an airtight container. When properly stored, snack cake can keep for up to five days at room temperature or up to a few months when frozen.
