What you need to make keto diet pancakes.
- Oil or what you usually use to pre-treat your griddle for nonstick. I like canola oil for a recipe like this one.
- Almond Flour- Look for the blanched and super fine variety of almond flour.
- Baking Powder
- Salt- dash as needed.
- Sugar Alternative- Use a granular sugar alternative that can be cooked with.
- Almond Milk - Feel free to sub in another kind of milk or nut milk or even water.
- Eggs- Whipped
- Vanilla Extract
How to make low carb pancakes.
- Preheat your griddle or skillet on medium heat after prepping it for nonstick using your preferred method. Oil works best in this recipe. Use enough to coat the pan.
- In a medium bowl, whisk together the flour, baking powder, salt and granular sugar alternative. Set this aside for a moment while you work.
- Now in another bowl, beat or whisk together the milk, eggs and vanilla extract.
- Combine together the ingredients in either of the bowls and mix until smooth (chunk free) without over mixing.
- Use a large spoon or similar sized object to drop dollops (depending on your preferred pancake size of course) of batter on to the skillet/griddle. When the edges begin to brown flip the pancakes over and continue to cook until done. Serve warm.

Pancakes get fluffy thanks to the air that gets into them when we mix them up. Certainly, gluten can help hold on to the air in pancakes. However, we will be using baking powder to help us make our pancakes airy and fluffy!
