How to make Keto Blueberry Muffins
- Preheat your oven to 325 and prep your muffin pan for nonstick.
- In a medium mixing bowl, use a fork or whisk to combine together the almond flour, coconut flour, baking powder, baking soda, and salt.
- Next, in a large mixing bowl, beat together the melted coconut oil with the monk fruit. Then beat in the almond milk and eggs.
- Add the dry ingredients from the first bowl to the wet ingredients in the second bowl. Stir until just combined- do not over-mix. Then gently fold in the blueberries.
- Bake for 20-25 minutes or until the muffins begin to brown. Allow the muffins to fully cool before transferring them to storage.
