This delicious recipe for breakfast pastry that is low in carbohydrates certainly tastes just as good as that famous stuff.
Low Carb Breakfast Pastry
This is the low carb version of that popular breakfast pastry.
However, this one does not come with all of that added sugar that the famous named brand stuff has in it.
This copycat 'Pop Tart' recipe is also sugar free .
I was surprised at how easy this recipe is to make as well using this sugar free strawberry jam. It sure smells good when you are baking it!
You probably already know who makes pop tarts.
Also, you probably also know that they taste and smell pretty good when they are warm and just popped in the toaster.
I have always been intrigued by the name that they have been given.
In case you have ever wondered why it is call pop tart you may be surprised to learn this fact.
Pop tarts were once called 'fruit scone'. But, perhaps someone somewhere thought that was kinda boring so they changed the name thanks to the inspiration from the 'pop art' by Andy Warhol. That name change was said to be a profitable one for the company too!
I once heard that the most popular flavor of Pop Tarts is strawberry.
A few weeks ago, I heard that they sell more strawberry Pop Tarts during the back to school season than at any other time. Cinnamon Brown Sugar Pop Tarts are pretty popular too.
I will focus on how to make the strawberry version of this recipe for sugar free Pop Tarts in this recipe.
We will then top our version of this recipe with a bit of sugar free topping as well. To make the sugar free strawberry filling for this breakfast pastry, you will need to follow this recipe for How to Make Sugar Free Strawberry Jam.
I do have a few tips for making your breakfast pastry, or Pop Tart, even better.
- When you have your pastry assembled, poke a few holes in the top layer in order to allow the air to escape while baking.
- Use the hack of a premade refrigerated pie crust instead of a homemade crust. Be sure to check the nutrition label to assure that the pastry sheets are low in sugar or carbs.
- Use cookie cutters to make your pastry in fun shapes rather than the usual rectangle.

- Butter- 2 sticks (1 cup) cold and cut into cubes.

- Sugar Free Powdered Sugar- 1 cup. You can buy sugar free powdered sugar here or make your own sugar free powdered sugar using this recipe.
- Vanilla Extract ½ teaspoon.
- Milk- 1 tablespoon.
How to make Low Carb Breakfast Pastry
Start by making the crust, which can be done a head of time or skipped by using a premade refrigerated pie crust .
- In a large bowl, combine together the flour (and binders if needed), granular sugar, and the butter. At some point it will be easier to work these together using your hands. When the mixture resembles oatmeal or coarse meal of sorts, gradually add a bit of cold water (a few teaspoons) at a time until the dough can be formed into a ball. Divide the dough in half and form each half into a ball. Wrap this in plastic wrap and refrigerate for at least an hour.
- When you are ready to make your pastries remove the refrigerated dough 15 minutes before you are ready to begin and allow it to get to room temperature. Prep your baking sheets with Parchment Paper that over hangs the edges of the baking sheets. Also preheat your oven to 400.
- Light flour the the baking sheets and roll out a dough ball in each of the baking sheet. Your dough should be rolled out to about â…›" thick. You can cut off any excess dough. Using the over hang of the parchment paper, transfer the rolled out dough to a flat surface. Then cut each of the rolled out dough's into evenly sized rectangles ( horizontal across once, vertical down the center and then vertical down the center of each half).
- Evenly spread a tablespoon of jam in the center of each rectangle of the first baking sheet of dough, avoiding the edges of each of the rectangles. Then, take a horizontally cut piece of dough from the second baking sheet and place it on the top of the jam. Seal the edges of each of the pastries using a fork or your fingers. You can re-position the pastries in order to use both baking sheets once all of the pastries have been assembled.
- Bake for 7-10 minutes or until the pastries begin to brown.
- To make the topping, blend together the sugar free powdered sugar, vanilla extract and the milk in a small bowl. Then drizzle it over each of the pastries after they have cooled for a few minutes.
