I mentioned above that this recipe is for strawberry cheesecake bites. However, you could use another fruit instead. I like berries such as blueberries as they are lower in carbohydrates and available all the time where I live.
Also, you can use a scoop and drop individual bites or balls onto a prepped with parchment paper baking sheet.
However, you could dry using other options instead. I like the idea of candy molds,a small cupcake pan or candy liners instead.
Ingredients needed to make these keto bombs.
- Strawberries- 1 cup. The strawberries should be rinsed, not frozen (you could use frozen strawberries, simply allow them to defrost first), stems removed, and cut in half.
- Cream Cheese- 8 ounces, softened to room temperature. This recipe works best with a full-fat cream cheese.
- Butter- 6 ounces, softened to room temperature. That is ยพ of a cup or one and a half sticks. Unsalted butter is preferred.
- Sugar Free Powdered Sugar- ยผ cup. You can find sugar free powdered sugar here or use this recipe for sugar free powdered sugar.
- Vanilla Extract- 1 teaspoon. Feel free to sub in another extract such as banana extract or strawberry extract (or both? yum!).
- Optional- salt (a pinch if you are using unsalted butter), toppings such as chopped nuts or shredded coconut.

- Start by preparing the strawberries. Rinse fresh strawberries and remove the stems. Then cut them in half (does not have to be pretty). Frozen strawberries should be allowed to defrost. Also, line a rimmed baking sheet with parchment paper.
- This recipe works great if you use a food processor or hand mixer. Start by mashing up the strawberries. You can do this by hand, in a food processor, blender, or using a hand mixer.
- In a food processor or large mixing bowl, combine together all of the ingredients except for any optional toppings. You can roll the formed bites in the toppings before placing them on top of the prepared baking sheet.
- When the ingredients are well blended you can use a scoop or large spoon to make the individual bites and then place them on to the prepared baking sheet. Then freeze the bites until firm (about an hour).
- Store these in an airtight container or zip top bag in the refrigerator for up to a week. You can also freeze these keto low carb strawberry bites.
