- Flour.White whole wheat flour was used to make my muffins. All purpose flour can alternatively be used.
- Baking Powder and Baking Soda. Used as leaveners for this recipe.
- Brown Sugar Alternative. Use a brown sugar alternative that measures like regular brown sugar and that can also be baked with.
- Spices Ground cinnamon, ginger, and nutmeg are used to complement the flavor of the carrots.
- Oil. A neutral oil, such as canola, works best
- Egg. Your egg should be at room temperature for better blanding.
- Vanilla Extract. Added for a bit of flavor balance.
- Milk. Whole milk was used in my muffins for moisture and texture. Other milks can be used but, the results may differ.

- While my muffins were made in a standard muffin size, you can make your muffins another size such as mini muffin pan or jumbo muffin pan. However, you may need to make adjustments as needed in baking time to compensate for the size difference.
- You can make your banana carrot muffins even better. Add some chopped walnuts or sugar free white chocolate baking chips.
- Freshly grated or shredded carrots are best to use in this recipe. This is because they offer the freshest flavor as well as a bit of moisture.

How to make No Added Sugar Banana Carrot Muffins
Prep Time : 10 minutes .
Bake Time: 25 minutes .
Servings: 12 average sized muffins .
- Prepare. Gather your ingredients and if you have not done so, grate your carrots and mash your bananas. Also, preheat your oven to 350 and prep your muffin pan for nonstick. Muffin liners work well in this recipe.
- Dry Ingredients.In a large mixing bowl, use a whisk to combine together the flour, baking powder, baking soda, sugar alternative, and spices (cinnamon, ginger, and nutmeg). Mix until well combined. Then make a shallow well (about halfway down) in the center of the mixture.
- Wet Ingredients. Next, in another bowl, combine together the oil, egg vanilla extract and milk and mix until well combined. Then, stir in the mashed bananas and grated carrots.
- Combine. Pour the mixture from the last step (wet ingredients)into the shallow well in the first bowl ) with the dry ingredients and use a rubber spatula to fold this mixture into the ingredients until just combined (do not overmix)
- Bake. Use a cookie scoop to distribute the batter into the muffin cups about three fourths of the way full. Bake the muffins for 20-25 minutes or until the edges begin to turn golden brown and the center (of one or two muffins) passes the toothpick test.
- Serve. Remove the muffins from the oven and let them sit for a couple of minutes in the pan before transferring them to a cooling rack to further cool before serving.
Expert Tip ๐ You can freeze leftover muffins by first wrapping the cooled muffins in foil. If you wrap them individually and then place them into a freezer-safe zip top bag, you can enjoy the leftovers individually as well!

Once your muffins have fully cooled they should be stored in an airtight container. When properly stored, muffins should keep for up to two days at room temperature, up to five days when refrigerated, or up to a few months when frozen.
