    What you need to make to make chocolate chip brown butter muffins without added sugar.

    • Flour Regular all purpose flour.
    • Leaveners. Baking Soda and Baking Powder.
    • Unsweetened Cocoa Powder. Using a good quality cocoa powder is recommended for flavor.
    • Butter. Use salted butter that is softened.
    • Brown Sugar Alternative. Use a granular brown sugar alternative that measures like brown sugar and that can also be baked with.

    • Eggs. Large eggs at room temperature.
    • Milk. Whole milk adds the best moisture for these muffins.

    How to make Brown Butter Chocolate Chip Muffins.

    • Prep Time 15 minutes .
    • Bake Time 20 minutes .
    • Servings 1 dozen regular sized muffins .
    • How to serve : Serve warm with butter and milk or coffee or enjoy cold the next day as a snack.
    • Notes: You will need a regular sized muffin pan, saucepan, mixing bowl, whisk, rubber spatula, and cookie scoop.

    1. Prepare. Preheat your oven to 400°F. Prep your muffin pan for nonstick. Muffin liners were used to make my muffins.
    2. Dry Ingredients. In a medium bowl, use a clean whisk to combine together the flour, baking powder, baking soda, and unsweetened cocoa powder, removing any lumps that may have formed.
    3. Butter. In a small saucepan on medium-high heat, melt your butter until it turns an amber color (about five to six minutes), stirring occasionally with a spatula or whisk . Then immediately remove the butter from the heat.
    4. Combine. In a large mixing bowl, use a whisk to combine together the sugar alternatives. Carefully add the brown butter to the bowl and whisk until well combined. Then add the eggs and milk and mix until incorporated into the other ingredients.
    5. Mix. Add the dry ingredients from the medium bowl to the large mixing bowl and mix until just combined. then use a rubber spatula or similar item to fold in the chocolate chips.
    6. Bake. Use a medium sized cookie scoop to scoop out the batter and evenly divide the batter among the muffin cups, filling each cup about three quarters of the way full.
    7. Bake. Bake the muffins for 18-20 minutes or until a toothpick comes out clean.
    8. Cool. Let the muffins sit in the muffin pan a few minutes before transferring them to a cooling rack to finish cooling.

    Tips for making the best Chocolate Muffins.

    Use actual butter rather than an alternative because butter has the specific ability to caramelize and add that nutty flavor when doing so. Salted butter adds an added flavor balance that brings out the caramelized flavors of the butter. Using a light colored pan can help you see the milk solids better when browning.

    1. When browning your butter, whisk or stir it to prevent the butter from burning. Also, it is important to immediately remove the butter from the burner once it reaches that amber color to prevent it from burning.
    2. It is the bits, or pieces, remaining on the bottom of the saucepan that are the browned milk solids. Scrape those bits into your mixing bowl as they add that intense nutty flavor that makes these muffins so good!
    3. For a more 'bakery-style' muffin, after combining the ingredients in the bowl, you can cover the batter and let it rest on the counter for 15 minutes before filling the muffin cups to allow the flour get more out of the leavening agents. Also, you can use a pan for large muffins and fill the muffin cups to the top.

    How to Store Brown Butter Muffins.

    Once the muffins have fully cooled they can be stored in an airtight container. When properly stored brown butter muffins can keep for up to four days at room temperature, up to a week when refrigerated, or frozen for up to a few months.
