- Unsweetened Cocoa Powder. Using a good quality cocoa powder is recommended for flavor.
- Butter. Use salted butter that is softened.
- Brown Sugar Alternative. Use a granular brown sugar alternative that measures like brown sugar and that can also be baked with.

How to make Brown Butter Chocolate Chip Muffins.

- Prep Time 15 minutes .
- Bake Time 20 minutes .
- Servings 1 dozen regular sized muffins .

- Notes: You will need a regular sized muffin pan, saucepan, mixing bowl, whisk, rubber spatula, and cookie scoop.
- Prepare. Preheat your oven to 400°F. Prep your muffin pan for nonstick. Muffin liners were used to make my muffins.
- Dry Ingredients. In a medium bowl, use a clean whisk to combine together the flour, baking powder, baking soda, and unsweetened cocoa powder, removing any lumps that may have formed.
- Butter. In a small saucepan on medium-high heat, melt your butter until it turns an amber color (about five to six minutes), stirring occasionally with a spatula or whisk . Then immediately remove the butter from the heat.
- Combine. In a large mixing bowl, use a whisk to combine together the sugar alternatives. Carefully add the brown butter to the bowl and whisk until well combined. Then add the eggs and milk and mix until incorporated into the other ingredients.
- Mix. Add the dry ingredients from the medium bowl to the large mixing bowl and mix until just combined. then use a rubber spatula or similar item to fold in the chocolate chips.
- Bake. Use a medium sized cookie scoop to scoop out the batter and evenly divide the batter among the muffin cups, filling each cup about three quarters of the way full.
- Bake. Bake the muffins for 18-20 minutes or until a toothpick comes out clean.
- Cool. Let the muffins sit in the muffin pan a few minutes before transferring them to a cooling rack to finish cooling.
