Brownie Base.
- Butter. Your butter should be melted. If you are using unsalted butter you can add a teaspoon of salt (such as Kosher salt) to your flour.
- Sugar Alternatives Brown alternative and white granulated sugar alternative.
- Eggs. Your eggs should be at room temperature for optimal blending.
- Vanilla Extract. Added for flavor balance.
- Flour. If you are using a flour alternative, select one that bakes and measures like regular all purpose flour.
- Unsweetened Cocoa Powder. Use a good quality and fresh cocoa powder for a better brownie.
Peanut Butter Layer.
- Peanut Butter. Use a no added sugar creamy peanut butter. Organic peanut butter may now work in this recipe because they tend to have a bit of oil.

- Vanilla Extract. Pure Vanilla Extract offers the best flavor for this peanut butter layer.
- Heavy Cream. Makes the texture of this layer easier to spread more evenly.
Ganache Layer.
- Sugar Free Chocolate Chips.
- Coconut Oil. This should be melted.
- Heavy Cream.
- Creamy Sugar Free Peanut Butter. For the decorative design on top.
Tips for making the best buckeye brownies.
Using good quality ingredients is essential for the structure and the flavors of the layers . This is especially true for the peanut butter and unsweetened cocoa powder.
More helpful tips for you.
- While my brownie layer was made from scratch, you can 'cheat' by using a sugar free brownie mix instead.
- When selecting you sugar alternatives, for best results, use sugar alternatives that measure like sugar and that can also be baked with.
- I like to use Parchment Paper that overhangs the sides of my brownie baking pan. This allows me to easily remove the brownies from the pan (less mess!!) for cutting.
- Make this sugar free recipe low carbohydrate and keto diets friendly. Simply swap out the all purpose flour with a low carb all purpose flour and make sure to use low carbohydrate chocolate chips
- Make sure that your brownies are fully cooled before adding the peanut butter layer. The peanut butter layer should also be set before adding the ganache layer.
- If your ganache layer seems too thin to spread out evenly, you can add a teaspoon or two of melted coconut oil to help thin it out.
How to make Sugar Free Buckeye Style Brownies
Prep Time: 20 minutes, add cooling and setting times .
Bake Time: 30 minutes .
Servings: 12, depending on how they are cut .
- Prep. Preheat your oven to 350 and double prep your baking pan. I like to line mine with parchment paper or foil and then lightly spray that with nonstick for a recipe such as this one.
- Sugar Alternatives. In a large bowl, use a whisk to combine together your melted butter with the sugar alternatives (brown and white) until combined. Then whisk in the eggs and the vanilla extract.
- Dry Ingredients. In a medium bowl, use a clean whisk to combine together the flour and unsweetened cocoa powder. Then add this to the large bowl, with the combined ingredients, and mix until just combined.
- Bake. Evenly spread the brownie batter in your prepare baking pan and bake until a toothpick comes out with a just a few crumbs and the edges are set (about 28-30 minutes). Then allow the brownies to fully cool before proceeding with the next step.
- Peanut Butter Layer. Outfit your mixer with a paddle attachment and then beat the peanut butter for about a minute or two to get it creamy. Scrape down the sides of the bowl and set the speed on low. Slowly add the sugar free powdered sugar along with the pure vanilla extract until full combined. Scrape down the sides of the bowl and on low speed, drizzle in the heavy cream and continue to beat until creamy.
- Layer. Evenly spread the peanut butter mixture over your cooled brownies.
- Ganache Chocolate. In a large microwave safe bowl, melt together your chocolate chips, coconut oil, and heavy cream, stopping to stir every 30 seconds. It should take about a minute and a half to two minutes to melt. Pour this over your set peanut butter layer.
- Peanut Butter Drizzle. In a clean microwave safe cup with a spout, microwave your peanut butter until it is in a 'pourable' consistency (about 30 seconds). Then carefully drizzle this over your chocolate ganache. To make the swirl design, simply use a butter knife to make the pattern.
- Slice. Once the brownie layers have fully set (about an hour at room temperature) you can slice and enjoy your brownies.
Expert Tip๐ You can refrigerate the brownies to get them to set faster. Also, a 9x13โ pan was used to make my brownies. For smaller and more brownies you can use a larger pan (baking times may vary).
How to store buckeye brownies.
Once the brownies have fully cooled and set, they should be stored in an airtight container in a single layer. When properly stored, buckeye brownies should keep for a couple of days when refrigerated Storage: Store any leftover brownies in an airtight container in the fridge for up to a few days or frozen for up to a few months.
