How to make a sugar free pie crust.
You will need:
- Almond Flour- 2 cups.
- Pecans- ยฝ cup. The pecans should be chopped fine.
- Sugar Free powdered Sugar- โ cup.
- Butter- ยฝ cup (1 stick) melted.
How to make the crust.
Place chopped pecans and almond flour in a skillet on medium heat stirring frequently until golden brown (about 10 minutes). Then combine the toasted ingredients with the remaining ingredients in a mixing bowl. When you are able to press this ingredients together, press it into a prepared pie pan and then refrigerate until set.
Ingredients needed to make Sugar Free Chocolate Pudding
- Makes 8 Servings Prep Time 10 min Cook time 15 min. Additional time 1 hour
- Crust- 1 (recipe above).
- Sugar Free Chocolate Instant Pudding- 2 boxes. Each box should be 1.3- 1.4 ounces.
- Heavy Whipping Cream- 3 cups.
- Frozen Whipped Topping with no added sugar- 1 tub. For example, an eight ounce tub of Zero Sugar Whipped Topping (check your local grocery store).
- For the topping, cream cheese (four ounces softened to room temperature), Sugar Free Powdered Sugar (ยฝ cup), additional whipping cream (1 ยผ cup), and vanilla extract (ยฝ teaspoon).
- Optional, sugar free sprinkles, chocolate shakings, or whipped cream.
How to make Sugar Free Chocolate Pudding Pie
- Prepare the pie crust as indicated above. Place the pie crust in the refrigerator to set while you make the filling.
- For the filling, beat together the dry pudding mix and heavy whipping cream on medium until smooth. Then add the frozen whipped topping and mix on low until until just combined.
- Use a rubber spatula or similar utensil to evenly smooth this filling over the prepared crust that you had refrigerated. Cover the pie with plastic wrap and refrigerate.
- When you are ready to serve the pie, mix together the topping ingredients and top the pie. My pie in the photos has the topping piped (the white stuff on top) along the edges.
