What makes funfetti cupcakes so good?
Funfetti cupcakes are basically vanilla cupcakes baked with colorful sprinkles and frosted with a simple homemade buttery frosting.
I like that this is an easy recipe that can be made from scratch in about 30 minutes.

Ingredients needed to make frosted cupcakes with sprinkles.
- Flour. All purpose flour was used to make my cupcakes. I have not tried this recipe using a low carb or other kind of all purpose flour.
- Baking Powder. This is the leavener of choice in most cake recipes. Use fresh baking powder for a better cupcake.
- Sugar Alternative. For best results, use a granulated sugar alternative that measures and bakes like regular sugar.
- Oil. Use a neutral oil, such as vegetable oil, so that oil bring moisture to the cupcakes without additional flavors.
- Eggs. Your eggs should be at room temperature for optimal blending.
- Milk. For better moisture, use a full fat milk.
- Vanilla Extract. Use 'real' or 'pure' vanilla extract as these cupcakes feature that vanilla flavor.
- Sugar Free Sprinkles. Select a "Jimmie" style for less sprinkle bleeding into the cupcakes.
- For the frosting, you will need butter that is somewhat soft, sugar free powdered sugar, vanilla extract, and additional sprinkles.
Expert Tip ๐ My cupcakes were made with colorful sprinkles. You can use the sprinkles of your choice however, if you choose a non-sugar free sprinkle, it can add sugar to your cupcakes.
How to make Sugar Free Funfetti Cupcakes
Prep Time: 10 minutes.
Bake Time: 20 minutes.
Servings: 12-16 cupcakes.
- Preheat your oven to 350 and prep your cupcake pan for nonstick. Cupcake liners work well in this recipe.
- In a medium bowl, sift together the flour and the baking powder. I like to sift my dry ingredients twice for a recipe such as this one to blend the ingredients well and to introduce air to the cupcakes for baking.
- Next, in a mixer outfitted with a paddle attachment, beat together the sugar alternative and oil until well combined.
- Scrape down the sides of the mixing bowl and beat in the eggs, oil, and vanilla extract.
- Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Then use a rubber spatula to fold in the sprinkles.
- Fill each of the cupcake liners two thirds of the way full and then bake the cupcakes in the center of your oven for 17-20 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
- Let the cupcakes sit in the pan for a few minutes before transferring them to a cooling rack to fully cool.
- To make the frosting, cream together the ingredients until you reach your desired texture. You can add additional powdered sugar alternative to thicken the frosting or additional soft butter to make it more creamy. The frosting looks best when piped on top of the cupcakes but, you can use the method that works best for you.

Tips for making the best funfetti cupcakes from scratch.
While you could use a whisk to combine together your dry ingredients, sifting is really recommended for this recipe. Sifting helps in introducing air to the ingredients as well as breaking up lumps in order to ensure an even rise and baking.
More helpful tips for you.
- Sometimes sprinkles can bleed into the cake while baking. To prevent this from happening, you can refrigerate your sprinkles and use the "Jimmy" style sprinkles rather than the 'pareils' (the round ones).
- Adding the sprinkles to the cupcake batter is the last step to making the batter and it should be done carefully for best results. Use a rubber spatula to gently fold in your sprinkles so that they are evenly spread in the batter and thus, your cupcakes.
- Butter is used to make the frosting in this recipe. Your butter should be soft enough to blend but, stable enough to hold the ingredients together. Cool butter rather than cold or very soft butter works best for me.

How to store easy funfetti cupcakes
Once the cupcakes have been cooled and frosted, they should be stored in an airtight container. When properly stored, these cupcakes should keep for about five days when refrigerated and a few months when frozen. If you plan to freeze these cupcakes in layers, first refrigerate them in a single layer so that the frosting can set. Then use parchment paper between the layers.
