This recipe features simple ingredients that you may already have on hand.
- Butter. Use butter that you have just taken out of the refrigerator and then cut into cubes. If you are using unsalted butter, add a half teaspoon of salt to the flour.
- Sugar Free Chocolate Chips. Semi-sweet chocolate chips were used to make my cakes.
- Sugar Free Powdered Sugar. You can use additional for dusting over your cakes before serving.
- Eggs. You will need both whole eggs and yolks, all at room temperature.
- Vanilla Extract . Added for flavor balance.
- Unsweetened Cocoa Powder. This is what makes the cake portion chocolatey.
- Flour. All purpose flour was used to make my cakes. You can however use a similar flour as long as it measures and bakes like all purpose .
- Optional- strawberries.

- For additional chocolate flavor, you can also add up to a quarter cup of sugar free dark chocolate chips.
- Before adding the melted chocolate to your mixing bowl, it is important that the melted chocolate is at room temperature rather than hot to prevent the eggs from curdling.
- The size of the ramekin you use will determine the size of your cakes and the number of servings. For more servings use smaller ramekins and for larger cakes, use larger ramekins.
- Can you make this recipe in a cupcake pan? Yes, but prep the pan really well and adjust your baking time as needed.
- Fill each of the ramekins no more than three quarters full to prevent a mess while they bake.
- Also, I like to place my ramekins on a baking sheet to make it easier to transfer them in and out of the oven and to make for an easier clean up.
How to Make Sugar Free Molten Chocolate Cakes
Prep Time:15 minutes .
Bake Time: 15 minutes .
Servings: 4, depending on the size ramekin used.
- Preheat your oven to 425 and prep your ramekins well for nonstick. I like to both grease and dust my ramekins with flour or additional sugar alternative or cocoa powder for a recipe such as this one.
- To melt together the chocolate chips and butter, simply place them into a microwave-safe bowl and melt them on high, stopping to whisk every 20-30 seconds until melted. Alternatively, you can use the double boiler method.
- While your melted chocolate mixture is cooling to room temperature, in a large mixing bowl, beat together the your eggs and sugar alternative on high until pale yellow and thickened (four to five minutes).
- Use a rubber spatula or similar item to fold in the melted chocolate mixture along with the flour and unsweetened cocoa powder to the mixing bowl. Fold until just combined, do not overmix.
- Distribute the batter into each of your prepared ramekins, taking care to not fill them more than three fourths of the way full.
- Bake the cakes for 12 to 15 minutes or until the edges of the cakes are set. The centers should still be 'jiggly'.
- Let the cakes sit for two minutes and then run a butter knife around the edges to loosen the cakes.
- To unmold the cakes, simply place a dessert sized plate on top of the ramekin and then flip or invert the cake on to the plate. You can then dust the cakes with additional sugar free powdered sugar and/or top with strawberries before serving.
Expert Tip๐ These cakes are best when served warm. Allowing the cakes to fully cool may affect the ability to get the chocolate lava to 'flow'. Also, baking times may vary depending on the size ramekins you are using.
