Everyone asks what is the difference between sherbet and sorbet?
I am sure that we all know the one person who gets sorbet and sherbet mixed up or calls them both by the same name. However, there is a difference between sorbet and sherbet.
What sorbet and sherbet do have in common is that they both are, or can be, made with fresh fruit.
Sorbet is generally made with three ingredients, sugar, water, and fruit.
Sherbet on the other hand, is made with dairy such as milk, to make it a more creamy frozen dessert.
You may be wondering does sorbet need sugar.
Yes, sorbet does benefit from sugar if used as a sweetener. This is especially true if the sorbet is made with a less sweet fruit. However, sugar also is important as it contributes to the structure or texture of sorbet which makes sorbet scoopable rather than a big ice cube.
The good news is that stevia is a viable alternative to sugar in sorbet.
In regular sorbet the sugar is made into a syrup which is combined with the fruit to make the perfect scoopable frozen treat. Stevia is able to copy this process, as we will see in this recipe.
Here are some tips for making homemade sugar free sorbet.
Yes, you can really use about any kind of fruit to make a sorbet. However, depending on how naturally sweet that fruit is, you may need to adjust the sweetener to get that perfect texture and flavor.
Here are some more helpful tips for you.
- This recipe calls for unsweetened orange juice. I suggest that you use freshly juiced oranges rather than store-bought juice. This will ensure that your orange juice in indeed orange juice and nothing else.
- Make this recipe into a sherbet. Simply stir in a half of cup of milk or similar dairy that measure like milk.
- Add a scoop or two of this sorbet to a bubbly beverage instead of ice to get a flavorful chill. Or you can add this to a smoothie in the blender for a cool flavoring.

Normally, this recipe would net out at about 12 grams of carbohydrates for the entire recipe.
However, you can take the carbs down by subbing in a low carb orange beverage (that can be frozen) for part of the orange juice.

The recipe for best sugar free sherbet
To make this recipe, you will need orange juice.
I suggest that you use fresh oranges rather than the orange juice purchased from a store.
This recipe calls for one and a quarter cups of orange juice.
That is about five average sized oranges.
You can use a large juicer or manually juice the oranges yourself.
Ingredients needed to make a more healthy sorbet recipe.
- Orange Juice- 1 ยผ cups. Freshly juice oranges is preferred to the store bought juice. This is because you want to make sure that there is simply orange juice added to this recipe.
- Water- 1 ยฝ cups.
- Stevia- ยฝ cup. If you decide to use another sugar alternative, you may need to adjust the amount of sugar alternative as stevia does not measure 1:1 with sugar. Start with 1 cup of that alternative if it does not measure 1:1 with stevia.
- Tip: Save the orange skin after juicing the orange to use as a cup to serve your sorbet in.
How to make no added sugar sorbet.
- Start by juicing your oranges if they have not been juiced. If you are able to save the orange skin, do so as you can scoop out the insides and use the orange as a cup to serve your sorbet in.
- Next, make the syrup for this recipe. To do so, in a saucepan on medium-low heat, boil together the water with the stevia. I suggest that you stir this as it heats up. Allow the syrup to boil for five minutes. Then turn off the heat and allow the syrup to cool.
- Meanwhile, use a juice filter to filter out anything not needed in the orange juice. I use a strainer set on top of a larger measuring cup so that the filtered juice has somewhere to go. If there is a lot of pulp etc. in your orange juice, you may want to repeat this process as needed.
- Once the syrup has cooled, you can use a whisk to blend together the orange juice with the syrup. Then transfer this to your freezer container and freeze for three hours.
- Every 30 minutes you will need to stir the mixture with a spoon so as not to crystallize the surface. Repeat this process every thirty minutes until the sorbet becomes creamy and free of sugar crystals (can take up to four hours).
- Enjoy!
