To make this recipe you will need Cream of Tartar. You can find cream of tartar here.
'Snickerdoodle' is a term that is used to describe baked goods that feature the flavors of butter along with cinnamon and sugar. Perhaps the most famous of these baked goods is the Snickerdoodle cookie.
Snickerdoodle cookies are soft and somewhat chewy in the center. On top of the snickerdoodle cookies is a topping made with cinnamon and sugar.
Cream of Tartar is the leavening agent that is commonly used in a snickerdoodle cookie. Cream of tartar is used in cookies to bring a distinct texture to the cookie thanks to the air pockets created.
What does cream of tartar taste like?
When used along, cream of tartar brings no specific flavor.
However, when baked in a recipe such as this one, the cream of tartar helps to bring on a bit of an acidic flavor which is what makes the snickerdoodle so famous. YAY! 😋

Ingredients needed to make Sugar Free Snickerdoodle Bars.
- Flour. My bars were made using all purpose flour (AP). You can try an alternative that measures like AP flour.
- Cream of Tartar. An essential ingredient to this recipe as it provides both leavening and a bit of acidity.
- Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can be baked with.
- Brown Sugar Alternative. Use a brown sugar alternative that measures like brown sugar and that can also be baked with.
- Butter. Your butter should be softened to room temperature for best results. While you could use a butter alternative, the butter flavor is really what is important to this recipe.
- Egg. The egg is what holds the other ingredients as well as the moisture together.
- Vanilla Extract. Really helps to balance out the other flavors.
- For the topping you will need granular sugar alternative and ground cinnamon.

- Preheat your oven to 325. Prep a baking pan or dish for nonstick. I use parchment paper for a recipe such as this one.
- In a medium bowl, use a whisk or a fork to mix together the flour with the cream of tartar.
- Next, in a mixing bowl, beat together the butter with the sugar alternatives until creamy. Then add the egg and the vanilla extract.
- Add the dry ingredients from the first bowl to the ingredients in the mixing bowl and mix until just combined. Evenly spread this in the prepared baking baking pan. Then sprinkle the remaining sugar alternative and cinnamon on top of the bars.
- Bake these bars for 25-30 minutes or until they begin to turn golden brown. While the toothpick test could work in this recipe, it is normal for the bars to be somewhat soft in the center .
- Allow the bars to fully cool before slicing to insure that you get a clean cut.
Expert tip 👉Use the backside of a rubber spatula to press the mixed ingredients into the baking pan before adding the topping.
