- While my bars were made with with strawberries, other berries can also work in this recipe. I like blueberries or raspberries.
- A blender is used to make the filling layer to get a well mixed and fluffy texture. You could also use a food processor to do this.
- Line your baking dish with parchment paper that overhangs the sides of the dish. This will make it easier for you to remove the bars from the dish for slicing.
- If you are using a baking pan rather than a baking dish, baking times may vary so it is a good idea to keep an eye on the bars while they bake.
- Allow the base crust to cool before adding the lemon filling. This will help prevent the filling from softening the base while also giving the base a crispier texture.
- My bars were made in a 9x13 baking dish. For thicker bars, use a smaller dish and for thinner bars you can use a larger one.

- Start by making the crust. Preheat your oven to 350 and prep your baking dish for non-stick such as parchment.
- Combine together the softened butter, flour, and sugar alternative in a medium bowl. Mix these ingredients until a dough-like texture forms.
- Transfer the crust dough to your prepared baking dish and press it evenly into place. Bake this for 15-20 minutes or until it starts to brown. Then remove the crust from your oven and allow it cool while you prepare the filling layer.
- Meanwhile, in a blender, blend together the strawberries, lemon juice, sugar alternative, flour, and lemon zest until smooth. Then add your eggs to the blender and pulse the ingredients until blended.
- Pour the blended ingredients over the crust- using a rubber spatula or the back of a spoon as needed to help guide the ingredients evenly.
- Return the bars to your oven and bake until the center appears set and the edges of begin to brown.
- Let the bars fully cool in the baking dish before removing them from the baking dish for slicing.
Expert Tip ๐ Once the baking dish reaches room temperature you can place the bars in your refrigerator to help the setting process.
How to store lemonade and strawberry bars.
Once the bars have fully set, they can be stored in an airtight container and refrigerated. If properly stored, they should keep for up to five days. I would not freeze these bars however.
