    This recipe is for anyone asking what is vegan cake made of.

    The quick answer is that a vegan cake is made with ingredients that do not come from animal byproducts.
    Thankfully, there are plenty of yummy foods (ahhh...chocolate) that fall into that category.

    You may also be wondering what does vegan dessert mean.

    Well, we know that in sugar free desserts there is no added sugar (although, some folks are okay with sugar from maple syrup or fruit).
    However, when it comes to vegan it usually means that there is no dairy (milk, butter, eggs, etc.) added to the recipe.
     

    I was recently asked what is a cake without flour called.

    The definition of a cake made without flour usually refers to cakes made without all purpose flour which contains gluten, thus gluten-free. Instead, flour alternatives are used in place of the flour.

    For this cake, we will use chickpea flour instead of all purpose flour.

    Chickpea flour is a an alternative that contains both fiber and protein. Coconut flour or almond flour can also be used however, you may need to adjust your other ingredients for consistency.

    Here are some tips for making gluten free cake.

    I mentioned above that to make this a gluten free recipe, we will use chickpea flour instead. You can find chickpea flour online or follow the directions that I will show you in a moment.

    Here are some more helpful tips for you.

    1. To keep this recipe vegan, you can use a vegan butter. Nut butters such as peanut butter will work too. I suggest reading the label for other ingredients that may be added to the product that you use.
    2. Yes, you can use all purpose flour in this recipe if you are not concerned about the gluten free aspect. I suggest using an extra quarter cup of flour as chickpea flour is more dense in consistency.
    3. This cake may turn out to be a bit more dense that you may expect it to be. This is because we are using a more dense flour. One way to work around this is to sift or whisk the chickpea flour before you use it in this recipe. Another work-around is to combine it with another flour. It is common to use half chickpea flour and half all purpose in a recipe.

    How to make chickpea flour.

    To make chickpea flour simply use a strong blender or food processor to grind the chickpeas into a flour. Alternatively, you can simply purchase chickpea flour online.

    The recipe for Sugar Free Vegan Chocolate Cake

    I mentioned that to make this a gluten free recipe, we will use chickpea flour. Yes, you can use all purpose flour in this recipe if you are not concerned about the gluten free aspect. I suggest using an extra quarter cup of flour as chickpea flour is more dense in consistency.

    To keep this recipe vegan, you can use a vegan butter.

    Nut butters such as peanut butter will work too. I suggest reading the label for other ingredients that may be added to the product that you use.

    What you will need to make this Sugar Free Vegan Chocolate Cake

    Please read the label on the ingredients that you are using to assure that they will conform with your dietary needs (vegan, sugar free, etc).
     

    • Chickpea Flour- 1 cup.
    • Baking Soda- ยฝ teaspoon.
    • Vegan Milk- โ…” cup. This can be almond milk, soy milk, or even coconut milk can be used.
    • Sugar Alternative- 1 cup equivalent to sugar. Vegan folks can use regular sugar. If you are using a sugar alternative, please use a granulated Sugar Alternative that measures 1:1 with sugar and is suitable for baking with.
    • Unsweetened Cocoa Powder- ยฝ cup.
    • Unsweetened Chocolate- 1 bar (4 ounces). You can find vegan unsweetened chocolate here and sugar free keto chocolate here. Please read the label on the chocolate that you use to assure that it is the product that you need to use. If you are using a bar, please have it chopped up for this recipe.
    • Butter- 6 tablespoons. You can find vegan butter here. Nut butters such as peanut butter will work too. I suggest reading the label for other ingredients that may be added to the product that you use.
    • Optional- sugar free or vegan powdered sugar for dusting.

    How to make Sugar Free Vegan Chocolate Cake

     

    • Preheat your oven to 325 and prep a springform pan (6" springform recommended) for nonstick. I suggest doing a double nonstick process if possible .
    • In a small bowl, whisk together the flour and the baking soda. Make a well in the center of the mixture and then pour the milk alternative into the well. Blend this until you get a sticky paste.
    • In another bowl, use a whisk or a fork to blend together the sugar (alternative) and the unsweetened cocoa powder. Set this bowl aside.
    • Next, melt the butter alternative and the unsweetened chocolate in a microwave or over the stove. Then stir the melted butter with chocolate into the bowl with the paste that you made in the second step. Once this is blended you can fold in the unsweetened cocoa powder with the sugar (alternative).
    • Bake this for 35-40 minutes or until the edge of the cake is firm and the center is no longer wobbly when shaken. Allow this cake to set on a wire rack and the store in the refrigerator before serving. Optional- dust with powdered sugar before serving.

    Ingredients

    • 1 cup Chickpea Flour - see post for alternatives
    • ยฝ tsp Baking Soda
    • โ…” cup Unsweetened Almond Milk - see post for alternatives
    • 1 cup Splenda - see post for alternatives
    • ยฝ cup Unsweetened Cocoa Powder
    • 6 tbsp Sugar Free Peanut Butter -see post for alternatives

    Instructions
