I mentioned that to make this a gluten free recipe, we will use chickpea flour. Yes, you can use all purpose flour in this recipe if you are not concerned about the gluten free aspect. I suggest using an extra quarter cup of flour as chickpea flour is more dense in consistency.
To keep this recipe vegan, you can use a vegan butter.
Nut butters such as peanut butter will work too. I suggest reading the label for other ingredients that may be added to the product that you use.
What you will need to make this Sugar Free Vegan Chocolate Cake
Please read the label on the ingredients that you are using to assure that they will conform with your dietary needs (vegan, sugar free, etc).
- Chickpea Flour- 1 cup.
- Baking Soda- ½ teaspoon.
- Vegan Milk- ⅔ cup. This can be almond milk, soy milk, or even coconut milk can be used.
- Sugar Alternative- 1 cup equivalent to sugar. Vegan folks can use regular sugar. If you are using a sugar alternative, please use a granulated Sugar Alternative that measures 1:1 with sugar and is suitable for baking with.
- Unsweetened Cocoa Powder- ½ cup.
- Unsweetened Chocolate- 1 bar (4 ounces). You can find vegan unsweetened chocolate here and sugar free keto chocolate here. Please read the label on the chocolate that you use to assure that it is the product that you need to use. If you are using a bar, please have it chopped up for this recipe.
- Butter- 6 tablespoons. You can find vegan butter here. Nut butters such as peanut butter will work too. I suggest reading the label for other ingredients that may be added to the product that you use.
- Optional- sugar free or vegan powdered sugar for dusting.
How to make Sugar Free Vegan Chocolate Cake
- Preheat your oven to 325 and prep a springform pan (6" springform recommended) for nonstick. I suggest doing a double nonstick process if possible .
- In a small bowl, whisk together the flour and the baking soda. Make a well in the center of the mixture and then pour the milk alternative into the well. Blend this until you get a sticky paste.
- In another bowl, use a whisk or a fork to blend together the sugar (alternative) and the unsweetened cocoa powder. Set this bowl aside.
- Next, melt the butter alternative and the unsweetened chocolate in a microwave or over the stove. Then stir the melted butter with chocolate into the bowl with the paste that you made in the second step. Once this is blended you can fold in the unsweetened cocoa powder with the sugar (alternative).
- Bake this for 35-40 minutes or until the edge of the cake is firm and the center is no longer wobbly when shaken. Allow this cake to set on a wire rack and the store in the refrigerator before serving. Optional- dust with powdered sugar before serving.
