- Cheddar cheese was used to make my muffins. I prefer a stronger cheddar, such as sharp or extra sharp however, you can use the cheddar of your choice.
- Use a baking mix that is fresh for best results. An expired baking mix means that your leavener is most likely expired as well which means that your muffins will not rise well.
- Make your clean up easier by using muffin liners. I like to lightly spray mine with a bit of nonstick as well.

Once the muffins have been fully cooled, you can store them in an airtight container or in individual storage bags for an on-the-go snack or meal. If properly stored and refrigerated, these muffins should keep for three to five days.

- Pre-cooked breakfast sausage. The breakfast sausage should be cooked and then crumbled.
- Pancake and Baking Mix. To make these specifically keto, use a keto baking mix and to make these low carbohydrate use a low carbohydrate baking mix.
- Milk. You can use a lower carbohydrate milk such as unsweetened almond milk or an alternative such as half and half.
- Oil I would use a neutral oil such as canola or vegetable oil.
- Cheddar Cheese. Shredded or grated cheese work well in this recipe.
- Green Onions. Sliced or chopped. Green onions give these muffins a splash of flavor and color.
Expert Tip ๐ Full fat ingredients, such as sausage, milk, and cheese, will give these muffins more moisture and flavor. To make these muffins lower in fat, simply use lower fat versions.
How to make Easy Keto Low Carb Sausage Muffins.
Prep Time: 10 minutes.
Bake Time: 22 minutes.
Servings: 12 muffins (regular size).
- If your sausage has not been cooked, do so first. Then preheat your oven to 350 and prep your muffin pan well for nonstick. I like to use liners that have also been lightly sprayed.
- Place the baking mix in a large bowl and use a whisk or fork to break up any lumps.
- Add the milk and oil to the baking mix and stir until combined.
- Next, use a rubber spatula to fold in the cheese and the green onion. Then fold in the crumbled sausage.
- Use a scoop to fill the muffins liners with a batter. For an easier clean- up, fill the muffin holes three fourths full.
- Bake the muffins for 20-22 minutes or until the tops turn golden brown. Then let the muffins sit int he pan for a few minutes before transferring to finish cooling.
Expert Tip ๐ To freeze the muffins to enjoy later you can wrap the muffins individually in plastic wrap and place them in into an airtight freezer safe container for up to 3 months. You can thaw the frozen muffins by placing them wrap in a paper towel and warming each muffin in the microwave for 20 second intervals until warmed through.
