    This recipe works great with any kind of bell pepper although, some may be sweeter than others (green bell peppers being the least sweet). Look for a firm pepper that has an intact skin as this will work best for this recipe.

    1. Peppers sometimes like to roll to one side when they are placed on a baking sheet. One way to prevent this is to cut the underside so that it will sit flat. The cut should be more like a shave and less of a slice.
    2. To make this recipe more neat for serving, place the individual peppers in a muffin cup. The muffin cups will make it easier to serve and even eat this recipe.
    3. Personalize your egg stuffed peppers by adding extra ingredients. Chopped breakfast meats (precooked), chopped vegetables such as green onions, or even taco toppings are ideas.

     

    How to prepare red peppers.

    Removing the stem is optional as you will not eat them but they sure can make for a nice presentation. Then cut the peppers in half from top to bottom.

    Use a spoon or a melon scoop to scoop out the inside. Be sure to remove the seeds.

    I mentioned above that baking the individual stuffed pepper in muffin cups is one method of making the stuffed peppers easier to serve. Placing those muffin cups into a muffin tin first can also be an idea to try.

    Also mentioned, adding additional toppings can make this recipe even better.

    For a more 'breakfast or brunch' approach, you could add precooked and chopped breakfast meat.
    However, adding chopped green onions or serving with taco-style toppings can add both color and flavor to these stuffed peppers.

     

    Ingredients needed to make Egg Stuffed Bell Peppers

    • Red Bell Peppers- 2. To prepare the red peppers, clean them as you normally would. Removing the stem is optional as you will not eat them but they sure can make for a nice presentation. Then cut the peppers in half from top to bottom.
      Use a spoon or a melon scoop to scoop out the inside. Be sure to remove the seeds.
       
    • Olive Oil- ยฝ tablespoon.
    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
    • Shredded Mozzarella Cheese- ยฝ cup. Feel free to sub in the cheese of your choice.
    • Eggs- 4.
    • Optional- toppings or mix-ins as desired.

     

    How to make Keto Baked Egg Stuffed Peppers

     

    • Preheat oven to 425 and prep a rimmed baking sheet with parchment paper.
    • Prepare the peppers by slicing them in half and removing the seeds etc on the inside. Using a scoop or large spoon can help. Then place the peppers with the cut side up onto the prepared baking sheet.
    • Drizzle a small amount of olive oil over the peppers as well as any desired seasonings. Bake the peppers until they begin to get soft- about 10-15 minutes.
    • Remove the peppers from the oven and sprinkle the cheese onto each pepper.Then carefully crack open an egg over each pepper. Top with optional seasonings and add-ins. Then return the peppers to the oven and bake until the eggs have been cooked through (18-20 minutes).
    • Serve immediately as this dish tastes best when served fresh.
