- Milk. Whole milk works best but, you can try using an alternative.
- Unsweetened Cocoa Powder. This where the chocolate comes from.
- Oats. Quick oats work best for shaped or rolled cookies. For the cookie shaped ones, you can use old fashioned rolled oats.

How to make chocolate peanut butter and oatmeal cookies.

- Line a rimmed baking sheet with parchment paper.
- Start by melting your butter. Do this in a large pot or saucepan over medium-high heat stirring as needed..
- Once the butter has completely melted, add the granulated sugar alternative, sugar free peanut butter, and milk. Stir the mixture continuously until smooth and homogenous. I like to use a whisk to do this.
- When the ingredients have blended together, remove the pan from the heat and whisk in the unsweetened cocoa powder until it is fully incorporated into the mixture.
- Next, use a spatula to gently fold in the oats.
- To make the cookies into a ball shape like mine, when the mixture has cooled enough to touch, you can use your hands to roll the mixture into evenly sized balls (about an inch and a half inches in diameter). Place them on the baking sheet and allow them to cool in the fridge for one hour.
- For the flatter cookies, after mixing in the oats and chocolate, use a cookie scoop or large spoon to drop spoonfuls of the cookie mixture onto the prepared baking sheet right away. The mixture sets fast, so work efficiently.

These cookies can be made as a ball or flattened to resemble a more of a cookie shape. To make these in a cookie shape simply drop them on to the baking sheet rather than rolling them into balls.
- Quick oats work best in this recipe if you are shaping your cookies into balls. Quick oats are smaller than rolled oats are in size, making it easier to work the mixture into shapes.
- This recipe calls for heating ingredients over the stove. It is a good idea to use a non-stick saucepan or spray the saucepan with nonstick to prevent the mixture from sticking and burning.
- Allow the cookies to cool at room temperature or in your refrigerator until set (30 minutes to an hour). This helps them firm up and maintain their shape.
- Optional add-ins include adding an extra tablespoon or two of cocoa powder or stirring in some coconut flakes.

This recipe looks amazing. I'm going to try it this weekend. I ordered your sugar free. baking guide but while I wait for it to arrive....please tell me how to make crispy sugar-free cookies. I've tried so many purchased cookies and they're all crumbly, dry, and have an aftertaste. What I would really love to be able to do is do recipes somewhere between regular diet and keto. I'm diabetic so I use some keto recipes but with kidney issues, I have to closely monitor protein.
