What you need to make cinnamon coffee cake.
- Flour Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
- Baking Soda
- Ground Cinnamon
- Butter- Softened to room temperature.
- Sugar Alternative- Granular 1:1 equivalent to sugar that can be baked with.
- Eggs
- Vanilla Extract .
- Sour Cream- 2 Full fat works best. You could also try subbing in Greek Yogurt for part.
- Filling- Sugar Free Brown Sugar , Flour, Ground Cinnamon.
- Topping- Flour, Brown Sugar Alternative, Ground Cinnamon , and Butter.
How to make Cinnamon Coffee Cake
- Start by making the top crumble layer and filling layer as indicated above. Set these aside while you work.
- Preheat your oven to 325 and prep a cake pan for nonstick. I use parchment and a square cake pan (9") however, a 9X13 cake pan should work too for this recipe.
- In a medium bowl use a fork or a whisk to blend together the flour, baking soda, and the cinnamon. Set this bowl aside.
- Beat together the butter with the sugar alternative until creamy. Then add the eggs, one at a time, mixing between additions. Lastly, you can add the vanilla extract.
- Now in this step we will alternate adding the sour cream and the flour mixture from the first bowl to the mixing bowl. Add ยฝ of each at a time, mixing gently between additions. Mix until just combined.
- To make the filling layer, simply combine the sugar free brown sugar, flour and cinnamon in a small bowl.
- To layer cake for baking. Pour half of the cake batter from the mixing bowl into the prepped pan. Top this layer with the filling layer. Then cover the filling layer with the remaining batter. Lastly, top this with the topping layer.
- Bake your coffee cake for 60-65 minutes or until a toothpick comes out clean. Allow your cake to cool before serving.
- To make the topping, In a medium bowl, combine together the flour, brown sugar, and cinnamon. Cut the butter into the mixture.
