- Sugar Alternative. Use a granulated sugar alternative that measures like sugar and that can also be baked with.
- Flour. All purpose flour was used to make my pie.
- Eggs. Your eggs should be at room temperature.
- Milk. Whole milk offers the best moisture for this pie recipe. I would not go below 2%.
- Coconut. Unsweetened shredded coconut.
- Butter. Your butter should be softened to room temperature. If you are using unsalted butter, you can add a half teaspoon of salt to the pie.
- Vanilla Extract. Feel free to change things up with another extract such as maple extract or banana extract.
- Ground Cinnamon. Added for a bit of flavor.
- Optional toppings: Fruit, mint, whipped cream, or a dusting of sugar free powdered sugar.
Tips for making the best Impossible Pie.

- Prep your pie pan or pie dish well for nonstick. I like to grease my pie dish and then lightly sprinkle a bit of flour on top.
- This pie tends to puff up while it is baking. You may want to place a baking sheet under it while baking in the oven to prevent a mess.
- Baking times can vary depending on the size of your pie dish or if you are are using a pie pan rather than a pie dish.
- Make sure that your oven is preheated to 350 before placing the pie on the rack. The heated oven is needed for fully baking the crust
- Resist the urge of opening the oven door during the first 45 minutes of baking. Opening the oven door can disrupt to process of the crust forming on the bottom.

Bake Time: 50- 55 minutes .
Servings: 10, depending on how it is sliced .
- Preheat your oven to 350 and prep your pie dish or pie pan well for nonstick.
- Place the sugar alternative, flour, eggs, milk, coconut, butter, extract, and cinnamon in your blender. Cover the blender and give the ingredients a few quick pulses. Then blend the ingredients until just combined (about 30 seconds).
- Transfer the ingredients to your prepared pie pan or dish.
- Bake your pie for 50-55 minutes or until the top of the pie turns golden brown.
- Place the pie dish on a wire cooling rack to cool to room temperature.
- While you can serve this pie once is has fully set and cooled, it is even better when you place it into your refrigerator for one to two hours before slicing and serving.
Expert Tip๐ This pie is done baking when when the top of the pie has turned golden brown and the center is still slightly jiggly. If you use the toothpick test, expect that there could be a few crumbs on the toothpick even though it is done baking. Your pie will continue to set while it cools.
