- Brown Sugar Alternative and Granular Sugar Alternative. When selecting sugar alternatives, select alternatives that are granular, measure like sugar, and can be baked with for best results .
- Sugar Free Peanut Butter. Creamy peanut butter works best.
- Eggs. Your eggs should be at room temperature for optimal blending.
- Vanilla Extract. Added for a bit of flavor balance.

- Your cake is done baking when the edges begin to turn golden brown. The center of the cake will still be soft but, should set as your cake cools.
- After removing the cake from the oven you can run a butterknife around the edge of your cake to make removing the springform ring of the pan easier to do. .
- If your cake starts to crack as you remove the ring then you can let it cool on the counter for 30 minutes, but if you loosen the edges with a knife you shouldnโt have a problem.

- Preheat your oven to 350 and prep a springform pan for nonstick (spray and/ or parchment can work).
- In a medium bowl, combine together your flour, baking powder, and baking soda.
- Using a large mixing bowl, beat together your butter and sugar alternatives until creamy. This can take a few minutes. Then beat in the peanut butter, eggs, and vanilla extract until incorporated.
- Add the dry ingredient from the first bowl to the mixing bowl and mix until just incorporated.
- Scrape down the sides of the bowl and then fold in the peanuts along with any optional chips.
- Evenly spread the batter into your prepared pan
- Bake the cake in the center of your oven for 20-24 minutes or until the edges of the cake start to turn golden brown (the center will be soft).
- Let the cake cool in the pan for 15 minutes before running a butter knife around the edges to loosed the cake from the pan. Then you can loosen the outer rim of the pan and allow the cake to fully cool before slicing and serving (or frosting).
