This is a no added sugar version of white chocolate peanut butter cups. This recipe is made by melting sugar free white baking chips and using them to cover a not added sugar peanut butter filling.

Ingredients needed to make Sugar Free Copycat White Chocolate Reese Peanut Butter Cups
- Sugar Free Powdered Sugar. Granular or another sugar will not work in this recipe so make sure that you are using powdered sugar.
- Vanilla Extract. Added as a flavor balance.
- Peanut Butter. Use a smooth peanut butter that has no added sugar in it.
- Sugar Free White Chocolate Chips. Use a "baking" white chocolate chip for best results.
- Vegetable Oil. Another neutral oil or coconut oil can be used.

How to make Sugar Free White Chocolate Peanut Butter Cups
Prep time 20 minutes
Yields 12-14.
- Start by lining a cupcake or muffin pan with liners.
- In a medium bowl, combine together the powdered sugar and the vanilla extract with the peanut butter until well combined. You can then place this into your refrigerator to harden up while you prepare the white chocolate.
- Next, in a microwave-safe bowl, microwave the white chocolate chips, stopping every 20 seconds to stir. Once the chocolate chips have melted, you can stir in the oil to smooth it out.
- Drop about a tablespoon of the melted chocolate into the bottom of each of the liners. You may need to guide the melted chocolate so that it covers the bottom third of the sides of the liners as well.
- Next, use a cookie scoop to scoop out the peanut butter mixture and form the scoops into balls. Press each of the balls (using your hands or an object to help you out) so that each of the balls is the circumference of the bottom of the muffin liners.
- Place the pressed balls into the muffin liners on top of the melted white chocolate layer from step four. Then top each of the peanut butter layers with the remaining melted white chocolate.
- Freeze or refrigerate the peanut butter cups until set.
