- Shredded or grated cheese can be used however, shredded cheese will melt more uniformly.
- Make sure that you are using 'pumpkin puree' and not pumpkin pie filling as these are two different products. Your pumpkin puree should have no added ingredients, such as sugar, in it.
- Roasted pecans are used in the topping. You can use pecans that have been roasted (or toasted), roast your own pecans, or simply use unroasted pecans.
- Not a fan of the topping? You can alternatively use a sugar free syrup, sugar free powdered sugar, or the topping of your choice instead.
- Do you have to use almond flour? If you are not following a low carb diet, regular flour can be used (1:1) however, your chaffles will not have the flavor and texture that comes from the almond flour.

- Start by preheating (and prepping) your waffle maker according to the manufacturers' directions. My chaffles were made with nonstick spray used just before making the chaffles.
- In a small bowl, use a whisk or fork to combine together the almond flour, baking powder, pumpkin pie spice.
- Next, in a large mixing bowl, use a clean whisk to combine together the pumpkin puree, eggs, and extract until combined. Then mix in the dry ingredients from the first bowl to the mixing bowl.
- Lastly, add in your cheese and mix until combined.
- When your waffle iron is ready and prepped, you can use a cookie scoop or similar item to add the batter. A mini waffle maker, like the one used to make my waffles, used a quarter of the batter to maker each chaffle.
- Cook your chaffle until done about three minutes for a mini or four in a larger waffle maker.
- To make the topping, simply melt the butter over medium heat and then stir in the other ingredients.
Expert Tip ๐ When adding the batter to your waffle maker, place the batter in the center of the waffle iron and then user your scoop (non-meltable) or spoon to spread the batter out. Avoid overfilling the waffle maker as this can result in a mess. Keep an eye on things while your chaffle cooks to prevent burning, usually when the steam slows or stops your chaffle is done.
How to store pumpkin chaffles.
Once your chaffles have fully cooled, they can be stored in an airtight container or zip top bag. When properly stored, these chaffles should keep for about three days refrigerated or longer when frozen.
