What makes pumpkin chaffles so good?

Pumpkin chaffles are waffles that are made with a cheese base (rather than all purpose flour) and flavored with pumpkin puree.

I like that these waffles are sugar free and loaded with favorite fall flavors.

Have you tried my Sugar Free Pumpkin Spice Latte Ice Cream?

That easy no-churn ice cream is a delicious no added sugar dessert that is also easy to make. These chaffles would make a delicious dessert when topped with a scoop of that ice cream.

Maple extract is added to these chaffles to make them taste even better. You can find maple extract here.

Why we love this recipe for homemade chaffles.

This recipe is made without the usual all purpose flour as a base. Using almond flour with eggs gives these chaffles both the flavor and the texture that makes them so good.

Here is what else we like about this recipe.

    • Chaffles are higher in protein that the usual waffle thanks to the cheese and eggs that are used to make them with.
    • This recipe can be made about anywhere that you can plug in a waffle maker .
    • You can enjoy this recipe any time of the day.
    • Personalizing this recipe is as easy as adding keto chocolate chips or swapping out your cheese.
    • These chaffles are perfectly crisp on the outside and soft the outside.
    • There is no added sugar and no wheat based flour which means that this recipe is friendly to many diets including low carbohydrate and gluten free diets.

Ingredients needed to make Pumpkin Chaffles with butter pecan topping.

    • Almond Flour. Just a small amount is used to help with the structure in this waffle alternative.
    • Baking Powder. A small amount is added to help make these chaffles fluffy.
    • Pumpkin Pie Spice Gives these chaffles even more flavor.
    • Pumpkin Puree. Use a pumpkin puree that has no added sugar.
    • Eggs. Your eggs should be at room temperature for optimal blending.
    • Maple Extract. Adds a nice balance to the pumpkin flavor.
    • Mozzarella Cheese. Use a full fat shredded cheese.
    • For the topping you will need Roasted Pecans (chopped), butter, and brown sugar alternative.

Tips for making the best pumpkin chaffles.

Using fresh ingredients is essential to the success of this recipe. This is especially true for the baking powder that we are adding to the mixing bowl.

    More helpful tips for you.

    1. It is almost always best to prep your waffle iron according to the manufacturers' directions. This includes preheating and spraying with nonstick.
    2. Shredded or grated cheese can be used however, shredded cheese will melt more uniformly.
    3. Make sure that you are using 'pumpkin puree' and not pumpkin pie filling as these are two different products. Your pumpkin puree should have no added ingredients, such as sugar, in it.
    4. Roasted pecans are used in the topping. You can use pecans that have been roasted (or toasted), roast your own pecans, or simply use unroasted pecans.
    5. Not a fan of the topping? You can alternatively use a sugar free syrup, sugar free powdered sugar, or the topping of your choice instead.
    6. Do you have to use almond flour? If you are not following a low carb diet, regular flour can be used (1:1) however, your chaffles will not have the flavor and texture that comes from the almond flour.

How to make Sugar Free Pumpkin Pecan Chaffles

    Prep Time: 10 minutes: .
Cook Time: 3-4 minutes per chaffle .
Servings: Depending on the size of your chaffle/waffle maker, four mini or two large .

    1. Start by preheating (and prepping) your waffle maker according to the manufacturers' directions. My chaffles were made with nonstick spray used just before making the chaffles.
    2. In a small bowl, use a whisk or fork to combine together the almond flour, baking powder, pumpkin pie spice.
    3. Next, in a large mixing bowl, use a clean whisk to combine together the pumpkin puree, eggs, and extract until combined. Then mix in the dry ingredients from the first bowl to the mixing bowl.
    4. Lastly, add in your cheese and mix until combined.
    5. When your waffle iron is ready and prepped, you can use a cookie scoop or similar item to add the batter. A mini waffle maker, like the one used to make my waffles, used a quarter of the batter to maker each chaffle.
    6. Cook your chaffle until done about three minutes for a mini or four in a larger waffle maker.
    7. To make the topping, simply melt the butter over medium heat and then stir in the other ingredients.

Expert Tip ๐Ÿ‘‰ When adding the batter to your waffle maker, place the batter in the center of the waffle iron and then user your scoop (non-meltable) or spoon to spread the batter out. Avoid overfilling the waffle maker as this can result in a mess. Keep an eye on things while your chaffle cooks to prevent burning, usually when the steam slows or stops your chaffle is done.

    How to store pumpkin chaffles.

Once your chaffles have fully cooled, they can be stored in an airtight container or zip top bag. When properly stored, these chaffles should keep for about three days refrigerated or longer when frozen.
