Sugar Free Strawberry Buttercream Frosting
This recipe is based upon the popular and classic buttercream frosting idea.
We are giving that classic buttercream recipe a bit of a twist.
I do have classic Sugar Free Buttercream Frostingg recipe if that is what you are looking for.
That recipe is the sugar free version of the classic buttercream frosting but, without all of the sugar (way too much sugar for my liking!).
I like to think that this sugar free frosting is all about pink and strawberries.
I like baking cakes and cupcakes even more these days thanks to a few conveniences that I found to help me out in the kitchen.

This recipe is especially for those of us who are asking what is the difference between buttercream frosting and regular frosting.
To be honest, if you were to ask me, there are more than one kind of 'regular' kinds of frosting. So I say that when I refer to 'regular' frosting I am talking about the more common frosting that does not the same fat ingredient as buttercream.
Buttercream frosting got its name because, well, it has butter in it.
Frosting has to have 'fat' to give it structure otherwise it would not stay in place or taste good on baked goods. While buttercream frosting has butter in it, other kinds of frosting will have other kinds of fat such as shortening.
If you have wondered how to make a thick butter icing or frosting, then you have come to the right place.
I should also add that if you have wondered how to make a sugar free thick butter-based frosting, then you have come to the right place as well. While a sugar free version of this recipe is less known, it is still a possibility!
This recipe also calls for real strawberries.
To prepare your strawberries first rinse them and then cut the stems off. You can then measure the strawberries for use in this recipe. The average strawberry has less than a half net carb in it if you are on a low carb diet.

The sugar, or sugar alternative, in this frosting is as important as the butter is to the success of the recipe. Obviously, we will not use actual sugar in this frosting.

Here are some tips for making your Sugar Free Buttercream Frosting
I just mentioned that using butter is essential to making this recipe a success. Also, I mentioned that using sugar free powdered sugar is just as essential to this recipe.
Here are some more helpful tips for making frosting.
- You will need to use a food processor to puree the strawberries. The longer you process the strawberries, the less likely the seeds will effect the texture of your frosting.
- If your frosting seems to be too thick for your needs, feel free to blend in half and half or heavy cream a tea or tablespoon at a time until your reach your desired consistency.
- While there is an amount listed for sugar alternative that is needed in this recipe, feel free to use less or more according to your person preferences for sweetness. Adjust your liquid ingredients as needed if you choose to add more or less of the sugar alternative.
- Using unsalted butter is not a big issue in this recipe. Salt is usually added in order to balance out another flavor, such as sweetness.
- If you have added the powdered sugar and you feel as if your frosting is still not thick enough, you can try adding small amounts of a thickener. Examples of thickeners that may help include arrowroot starch, unsweetened gelatin, or tapioca.
- For best results, please make sure that your cake has fully cooled before frosting it. You would probably not want your frosting to melt on top of the cake. I have seen this happen and it is not pretty 🙂 . A cake also needs to set enough to not fall apart when a spatula or frosting knife touches it.

The experts say that you can store a buttercream frosted cake at room temperature for a few days.
However, I prefer to store my buttercream frosted cakes and cupcakes well covered in the fridge for up to a week or week and a half. I suggest letting it sit at room temperature for 10 minutes or as needed to soften up the butter before serving. Also, this frosting can be frozen in an air tight container such as a zip top bag.

- Strawberries- 1 ½ cups. Rinse your strawberries and remove the stems. Alternatively, you can use frozen strawberries that have been allowed to thaw.
- Butter- 1 cup. That is two sticks. Use unsalted butter that is softened to room temperature for best results.
- Sugar Free Powdered Sugar- 3 cups divided. You can add additional as needed. I mentioned that you can make this sugar yourself using this recipe or buy sugar free powdered sugar online here.
- Vanilla Extract- 1 teaspoon.
- Optional- half and half or whipping cream as needed to adjust consistency. Up to three tablespoon should be enough.
How to make strawberry buttercream frosting.
- Use a blender or food processor to puree the strawberries. Puree them until smooth and until the seeds are less visible as the seeds can have an effect on the texture of your frosting.
- Next we will cook the strawberry puree to thicken it. In a saucepan over medium heat, bring the strawberry puree to a boil stirring often. It should take about twenty minutes for it to yield between a quarter and a third of a cup or half the original amount added to the saucepan. Then remove the reduced puree from the stove and allow it to fully cool.
- In a mixing bowl, beat together the butter with one cup of the sugar free powdered sugar until it becomes fluffy. Then gently stir in by hand half of the strawberry puree and the vanilla extract. Return the mixing bowl to the mixer and add another cup of powdered sugar along with the remaining puree.
- Add the remaining powdered sugar and optional half and half or whipping cream as needed until you reach the consistency that you desire.
