- Whisk in 3 ยฝ cups of the milk with the ingredients in the saucepan and then warm the ingredients on medium heat until steam forms (about five minutes), whisking the ingredients as needed. The mixture should be somewhat thickened enough to stick to your whisk or a spoon.
- Meanwhile, while the ingredients are heating, in a medium mixing bowl, use a clean whisk to combine together the egg yolks, cornstarch and the remaining milk (a half cup).
- Once the mixture on your stove has heated as indicated, carefully, pour a thin steady stream of the hot mixture into the mixture in the mixing bowl, whisking constantly and rapidly. Then carefully transfer the mixture back into the saucepan.
- Return the saucepan to the stove on medium heat and cook until the pudding begins to bubble and has thickened (10 to 15 minutes). At this point, continue to cook pudding for a minute whisking constantly.
- Turn the heat off and remove pan from heat to stir in the vanilla and butter until fully incorporated.
- Carefully pour the pudding through a fine mesh strainer to remove any lumps if needed. Then cover the pudding with plastic wrap, touching the wrap directly to the surface of the pudding if possible to prevent a layer of skin from forming on your pudding.
- When the pudding has set and you are ready to serve it, simply scoop pudding servings into cups or small bowls and enjoy.
