    • Milk. Whole milk is best as it is thick and creamy. Alternatives include full fat coconut milk or heavy cream (low carb alternatives as well).
    • Vanilla Extract. This adds to the flavor of the pudding.
    • Egg Yolks. This help to make the pudding more rich while aiding in thickening the pudding.
    • Cornstarch. Essential ingredient added for thickening. This also gives the pudding a light and silky texture that is desirable in pudding, unlike certain other thickeners.
    • Butter. Unsalted butter is preferred however, if you are using salted butter you can omit adding salt.

    Tips for making the best sugar free pudding.

    Using a full fat milk or similar dairy will make this recipe rich as it is expected to be. If you really want to knock out some of the fat, do not go below 2% milk as anything thinner can lead to a thinner pudding consistency.

    1. For an even richer taste, stir in a half teaspoon instant espresso powder. You can add this when you add the butter and vanilla extract.
    2. Make this recipe even more chocolatey but adding up to a quarter cup of sugar free chocolate chips when you add your butter and vanilla.
    3. The secret to the success of this recipe is in whisking. Whisk the mixture constantly as indicated to break up lumps, blend the ingredients, and prevent burning.
    4. Allowing the pudding to get too hot while it is cooking can make your pudding too thick and lumpy. It is a good idea to keep your pudding from going from bubbling to boiling.
    5. Give the pudding enough time to set in your refrigerator before serving. Four hours is the minimum recommendation .

    How to make Homemade Sugar Free Chocolate Pudding

    Cook Time: 15 minutes .

    1. In a medium sized saucepan, whisk together the unsweetened cocoa powder, sugar alternative, and salt until the ingredients are well combined and there are no lumps present.
    2. Whisk in 3 ยฝ cups of the milk with the ingredients in the saucepan and then warm the ingredients on medium heat until steam forms (about five minutes), whisking the ingredients as needed. The mixture should be somewhat thickened enough to stick to your whisk or a spoon.
    3. Meanwhile, while the ingredients are heating, in a medium mixing bowl, use a clean whisk to combine together the egg yolks, cornstarch and the remaining milk (a half cup).
    4. Once the mixture on your stove has heated as indicated, carefully, pour a thin steady stream of the hot mixture into the mixture in the mixing bowl, whisking constantly and rapidly. Then carefully transfer the mixture back into the saucepan.
    5. Return the saucepan to the stove on medium heat and cook until the pudding begins to bubble and has thickened (10 to 15 minutes). At this point, continue to cook pudding for a minute whisking constantly.
    6. Turn the heat off and remove pan from heat to stir in the vanilla and butter until fully incorporated.
    7. Carefully pour the pudding through a fine mesh strainer to remove any lumps if needed. Then cover the pudding with plastic wrap, touching the wrap directly to the surface of the pudding if possible to prevent a layer of skin from forming on your pudding.
    8. When the pudding has set and you are ready to serve it, simply scoop pudding servings into cups or small bowls and enjoy.
