The recipe for Keto Blueberry Pancakes
This is a keto, low carbohydrate, gluten free, and sugar free pancake recipe.
Instead of using all purpose flour, we are using almond flour to make this recipe.
To make this recipe you will also need blueberries.
The blueberries are carefully folded into the batter just before cooking the pancakes.
I like to use refrigerated blueberries as blueberries tend to be a bit fragile when used in a recipe such as this one.
Ingredients needed to make low carb blueberry pancakes.
- Oil or what you usually use to pre-treat your griddle for nonstick. I like canola oil for a recipe like this one.
- Almond Flour- 1 cup. Look for the blanched and super fine variety of almond flour.
- Baking Powder - 1 ยฝ teaspoons. You can find vegan and gluten free baking powders here.
- Salt- dash as needed.
- Sugar Alternative- 2 tablespoon equivalent to sugar. Use a granular sugar alternative that can be cooked with for best results.
- Vanilla Almond Milk - โ cup. Feel free to sub in another kind of milk or nut milk or even water. Also, if you do not use a vanilla flavored milk, you can add ยฝ teaspoon of vanilla to the batter.
- Eggs- 2 whipped. Vegan folks can use a vegan egg substitute that equals two eggs.
- Butter- 2 tablespoon, melted. This is for the batter.
- Blueberries- ยผ cup. That is about 15-17 average sized blueberries. Plus additional as desired for topping.
- Sugar Free Syrup- for serving with.
How to make Keto Blueberry Pancakes
- Preheat your griddle or skillet on medium heat after prepping it for nonstick using your preferred method. Oil works best in this recipe. Use enough to coat the pan.
- In a medium bowl, whisk together the almond flour, baking powder, salt and granular sugar alternative. Set this aside for a moment while you work.
- Now in another bowl, beat or whisk together the milk, eggs and vanilla extract (optional add in if you are not using vanilla milk).
- Combine together the ingredients in either of the bowls and mix until smooth (chunk free) without over mixing. Then use a rubber spatula or similar utensil to fold in the blueberries. Alternatively, you can place several blueberries on top of the pancakes after pouring the batter on to the skillet (and thus not adding the blueberries directly to the batter itself).
- Use a large spoon or similar sized object to drop dollops (depending on your preferred pancake size of course) of batter on to the skillet/griddle. When the edges begin to brown (two to three minutes) flip the pancakes over and continue to cook until done. Serve warm.
