    Making a filling and tasty casserole recipe such as this one is the perfect answer to that question.
    Even better, this recipe is so filling that you would be sure to have leftovers that could get you through at least another meal.

    The truth is that this keto casserole is easy to personalize.

    For starters, you do not have to add the chicken or you could sub in turkey (think leftovers from holidays?). Swapping out the cheddar cheese for another cheese is also an option.

    By the way, this recipe is friendly to both the low carbohydrate and the keto diets.
    On the other hand, this is not a low fat, low calorie or vegan recipe.

    Here are some helpful tips.

    1. This recipe can be easily customized. Feel free to add a friendly vegetable such as asparagus or broccoli.
    2. This keto low carb casserole recipe can also be made in advance. Simply assemble the ingredients and cover it before storing the casserole in the refrigerator. I suggest allowing the refrigerated casserole to get to room temperature (sit out for 10 minutes or as needed) and then stirring it before heating.
    3. Also, I like the idea of freezing away the leftovers to eat later on. This is a great idea for a meal prep! Simple cut the casserole into individual sized pieces and freeze them in an airtight container or zip top freezer bag. Allow the frozen casserole to defrost before heating.

    I mentioned above, this recipe can be easily customized. Feel free to add a friendly vegetable such as asparagus or broccoli.

    I also mentioned that you will need shredded chicken for this recipe.

    To shred the chicken, you must cook it or have it cooked first. Use two forks to easily shred the cooked chicken.
    Tip: You can use leftover chicken, store-bought shredded chicken, or pick up a rotisserie chicken and shred it.

    Ingredients needed to make Keto Low Carb Chicken and Bacon Casserole.

     

    • Chicken Breasts- 2, cooked and shredded. Each breast has about six to eight ounces on average.
    • Bacon- 4 slices. The bacon should be cooked and diced.
    • Cream Cheese- 8 ounces. The cream cheese should be cut into chunks and then allowed to sit at room temperature for best results.
    • Sour Cream- 1 cup.
    • Heavy Whipping Cream- ⅔ cup.
    • Garlic Powder- 1 teaspoon.
    • Chopped Onion- 2 tablespoons. The dried chopped onion works best.
    • Cheddar Cheese- 2 cups, shredded. I am a fan of the sharp kind however, you can use what you prefer.
    • Seasonings as desired-This can include Salt and/or Pepper.
    • Optional- chopped jalapeno as desired

    How to make Keto Low Carb Chicken and Bacon Casserole

     

    • Shred the cooked chicken if it has not been shredded. I find that using two forks works best for shredding. Transfer the shredded chicken to a large mixing bowl. Also, cook and dice the bacon if it has not been cooked and diced.
    • Grease a square baking dish well and preheat the oven to 350.
    • In a saucepan on low to medium heat, heat the cream cheese chunks allowing them to soften. Whisk the cream cheese as needed to break up the chunks and aid in the softening process. Then stir in the sour cream allowing for the cream cheese and sour cream to blend together.
    • Once the cream cheese and sour cream have blended you can remove the saucepan from the heat and stir in the heavy whipping cream, garlic powder, chopped onion, and desired seasoning(s). Transfer this mixture to the large mixing bowl that contains the shredded chicken and blend the ingredients well. You can add any optional chopped pepper at this time. Then transfer to the prepped baking dish.
    • Top the casserole with the shredded cheese and chopped bacon. Bake the casserole for 20-25 minutes or until the cheese has fully melted.

    Ingredients
