This is an easy and fun recipe for making carrot cake.
I especially like that I can make this a sugar free recipe as well!
My recipe for Sugar Free Carrot Cake is a lot like this one.
Certainly, both recipes are for carrot cake that does not have added sugar in it.
However, this recipe for carrot cake has been adjusted to bake in an air fryer.
I love experimenting with my air fryer. Luckily, I found some Useful Accessories for Air Fryers that you may also like.
I know we are all wondering can we bake cake in an air fryer?
This recipe for an air fried cake is certainly an example of how you can actually bake that cake.
I like how easy this cake is to make as well.
There are some adjustments that are needed when baking a cake in an air fryer.
However, this is true for about anything that you would bake in an air fryer.
You would need to adjust any air fryer recipe because of the size of the oven and the speed of baking in an air fryer.
This recipe calls for the same basic ingredients that we would use in a regular carrot cake recipe.
The amounts of the ingredients are adjusted for a smaller cake.
As a result, the cake tastes just like a regular carrot cake tastes.
You may need to get a cake pan to make this recipe.
You can find an air fryer cake pan easily online. For a regular 'egg-shaped' air fryer, a 6" or 7" cake pan should work but, you may want to measure yours first.
Here are some tips for making your air fryer carrot cake.
I just mentioned that for certain kinds of air fryers you will need to cake a cake pan for air fryers and that you should measure your air fryer first (a 6" or 7" pan would probably work). You can find an air fryer cake pan easily online.

- Preheating you air fryer to 350 before placing the cake into it is essential to getting the heat circulated for even baking.
- Also important is to grease your cake pan well before adding the ingredients to it. I would even suggest flouring over it as well.
- Here is a way to help transfer the cake in and out of the air fryer and help keep the top over the cake from turning too brown. Use a sheet of aluminum foil that is long enough to both transfer the cake loosely cover the cake top.
- Instead of using a toothpick to test the cake for being done, use a wooden skewer instead.

Using the right kind of oil in an air fryer is essential for keeping things safe.
When choosing a method of nonstick or adding oil to a recipe, it is best to use something with a high burning point.

The recipe for Sugar Free Air Fried Carrot Cake

Ingredients needed to make this air fried cake.
- All Purpose Flour- 1 ¼ cups. I have not tried this but, to make this low carb, use a low carb all purpose flour. Also, to make this keto use a keto all purpose flour.
Anyone using any of the gluten free all purpose flour alternatives should check the packaging to see if a binder for gluten free baking is needed as well. - Baking Powder- 1 teaspoon.
- Baking Soda- ½ teaspoon.
- Pumpkin Pie Spice- 1 teaspoon. Can sub in ground cinnamon if desired.
- Sugar Alternative- ¾ cup. Please use a granular sugar alternative that measures 1:1 with sugar for best results.
- Eggs- 2.
- Canola Oil- ¾ cup. You can sub in a high burning point oil such as corn oil, peanut oil, or safflower oil.
- Carrots- 2 cups grated.
How to make Sugar Free Air Fried Carrot Cake.
- Preheat you air fryer to 350 and prep you cake pan well for nonstick. I like to grease mine and flour over that.
- In a medium mixing bowl use a fork or a whisk to blend together the flour, baking powder, baking soda and the pumpkin pie spice.
- Next, in a large mixing bowl, whisk or blend together the sugar alternative, eggs and oil.
- For the next step, we will add the dry ingredients from the first bowl to the large mixing bowl. Do this by adding half of the dry ingredients at a time, stirring between additions. Then fold in the carrots.
- Transfer the cake batter to the prepared cake pan and then carefully transfer the cake pan to the air fryer basket. Air fry this 30 minutes and check the top of the cake to make sure that it is not getting too dark. If it is you can place a bit of foil over the cake top and air fry until a toothpick or wooden skewer comes out clean (35-40 minutes total).
- Allow the cake to cool on a rack before removing from the pan.

- ½ tsp Baking Soda

- ¾ cup Splenda -see post for alternatives
- 2 Eggs

- 2 cups Carrots -grated, about 4-5 regular sized carrots grated
Instructions
- Preheat you air fryer to 350 and prep you cake pan well for nonstick. I like to grease mine and flour over that.

I love carrot cake and will be trying this recipe out. I do want to point out that 2 large eggs have approx 370mg of cholesterol. Giving the option of using an egg alternative (egg beaters) would significantly cut down on cholesterol, and calories.. I do KETO and my doctor went nuts when she saw my lab results. Switching to Egg Beaters significantly (down to normal) cut my cholesterol. (200+ down to 110)
Also, in terms of pans and air fryers, I use the same pan set that I bought for my "Insta-pot" They fit my fryer well, and seem to work.
