This recipe is based upon the popular Cinnamon Pecan Rolls that are so popular.
This recipe has no added sugar in it.

This recipe however, does not come with a glaze on top.

You may be wondering what is the difference between caramel rolls and cinnamon rolls.
This could be because sometimes they may look the same.
Or, sometimes caramel rolls and cinnamon rolls may have the same or similar ingredients.
However, there could be a difference between the two kinds of rolls.
Caramel rolls often have a glaze which can also make the rolls into 'sticky' buns.
Cinnamon rolls on the other hand, are not known for having a glaze.
People ask can a diabetic eat cinnamon rolls.
I get this question because cinnamon rolls are usually made with sugar.
Especially when there is a glaze is added to the top of the rolls.
This recipe for rolls has no added sugar.

About this recipe for sugar free rolls.
These rolls are made as a brioche style dough that is stuffed with a sugar free caramel style pecan filling. They can be served warm just out of the oven or cool as a leftover.
There are two ways to serve these rolls.
Serving these rolls as baked they can be served as is or topping with a bit of sugar free icing or frosting. However, if you serve the rolls bottoms side up, the sticky caramel on the bottom acts like an icing.
Ingredients needed to make this Sugar Free Cinnamon Roll recipe
- Warm Milk- 1 cup (no added sugar almond milk can be used).
- Butter- 1 cup, divided, (two sticks) softened to room temperature.
- Sugar Alternative- ยฝ cup. Please use a granular sugar alternative that measures 1:1 with sugar and that can also be baked with.
- Instant Yeast- 2 ยฝ teaspoons. Many packets of instant or quick yeast are this size. Please read the packaging to make sure.
- Eggs- 2, at room temperature.
- All Purpose Flour- 4 ยฝ cups, plus additional as needed.
For the filling.
- Brown Sugar Alternative- ยพ cup. Please use an alternative that is granular and measure 1:1 with brown sugar.
- Melted Butter- ยพ cup.
- Pecans- 1 cup, chopped.
- Ground Cinnamon- 1 tablespoon.
- Nutmeg- ยฝ teaspoon.
How to make Sugar Free Caramel Pecan Cinnamon Rolls
- In a large mixing bowl use a whisk to combine the warm milk with a half cup of the melted butter. Then blend in the sugar alternative. Once they are blended you can whisk in the yeast and the eggs, one at a time.
- For the next step we will add the flour to the mixing bowl. Do this by adding half of the flour ( 2 ยผ cups), stirring the ingredients with a wooden spoon, and then the remaining flour. Stir until the dough becomes thick and you can not longer stir.
- Lightly flour a flat surface that can be used for kneading the dough and then transfer the dough to the surface. You will need to knead the dough for it is elastic and soft. Add the remaining melted butter as needed a tablespoon at a time as well as any additional flour (one tablespoon at a time) as needed if the dough becomes too sticky.
- Prepare a bowl by greasing it with oil and place the dough in the bowl, cover it with a clean kitchen towel and allow it to rise until it has doubled in size, about two hours. Once the dough has doubled you can transfer it to a floured dusted surface. Use a rolling pin to roll the dough into a 16โ x 20โ rectangle.
How to put these sugar free Caramel Pecan Cinna-Buns together.
- We will now make the filling, place half of it in a prepped baking dish, and use the rest to make the rolls with. In a medium mixing bowl combine the melted butter with the brown sugar alternative, spices, and chopped pecans. The mixture should resemble a thick caramel. Spread โ of the mixture into the bottom of the prepped baking dish. Then spread the remaining filling over the rolled out dough. Roll the dough with the filling into a log, starting with the short end and pressing tightly on the edges while your roll. Then use a knife to cut the log into rolls. Cut out big rolls.
- Place the rolls into the pan with the filling that you placed on the bottom of. Cover the baking dish with a clean kitchen towel or cloth to rise a second time (45 minutes). When you are ready to bake the rolls, preheat your oven to 400 degrees and bake for 25 to 30 minutes or until the rolls turn golden brown.
