    Sugar Free Chocolate Chip Oatmeal Bars

    Ingredients needed to make sugar free oatmeal bars.

    • Old Fashion Rolled Oats-
    • Flour
    • Baking Soda
    • Butter- . The butter should be softened to room temperature.
    • Brown Sugar Alternative- Please use a granular brown sugar alternative that measures 1:1 with sugar and that can be baked with for best results.
    • Egg- The egg should be at room temperature.
    • Egg Yolk
    • Vanilla Extract
    • Sugar Free Chocolate Chips- I like using two different size chocolate chips or mixing milk chocolate with regular chocolate chips.

    How to make Chocolate Chip Oatmeal Bars

     

    1. Preheat your oven to 325. Prep a rectangular baking pan for nonstick. I use parchment paper that slightly overhangs the edges of the pan. Then I give it a quick spray with nonstick.
    2. In a medium bowl, use a whisk or fork to mix together the oats, flour, and baking soda. Then in a mixing bowl, beat together the butter with the brown sugar alternative until creamy. Add the eggs one at a time, giving a quick stir between additions. Then stir in the vanilla extract.
    3. For the next step we will add the dry ingredients from the first bowl to the ingredients in the mixing bowl. Do this by adding half of the dry ingredients, then the other half. Mix the ingredients until just combined.
    4. Lastly, fold in the chocolate chips. Then evenly spread the mixture into the prepared baking pan. Bake for 20-22 minutes or until the edges begin to brown. I like like to turn the pan around after about ten minutes for even baking.
    5. Remove the pan from the oven and allow the bars to cool before using the extended parchment paper to life the bars from the pan to cut.

    Tips for making the best oatmeal bars.

    This recipe calls for old fashion or rolled oats. Rolled oats give these bars the perfect chewy textures that quick oats do not provide.

    More helpful tips for you.

    1. This recipe calls for ยพ of a cup of butter. I love the taste of peanut butter with oatmeal and as a result, will sometimes sub in part of the added butter with peanut butter.
    2. Using two different sized chocolate chips can make this recipe for oatmeal bars even more interesting. You can also use a milk chocolate with a more loaded chocolate chip in this recipe.
    3. Add something different to your bars with or instead of the chocolate chips. I like raisins, coconut flakes, or even chopped nuts.
    4. After taking the bars out of the oven, it is a good idea to allow them to cool in the pan. This will make it easier to cut them into bars.
