Ingredients needed to make this homemade popsicle recipe
- Granulated Coffee- 2 tablespoons.
- Hot Water- ¼ cup.
- Coconut Milk- one 13-14 ounce can. Please use coconut milk that has not been sweetened.
- Almond Butter- ½ cup, also unsweetened.
- Erythritol- 3 tablespoon or as needed. You can use any sugar alternative of your choice as long as it measures 1:1 with erythritol.
- Sugar Free Chocolate Chips- ½ cup.
How to make mocha coffee popsicles.
This recipe can be made is a blender or food processor.
- Dissolve the coffee granules in the hot water, stirring as needed to do so.
- Place the coconut milk and the almond butter in your blender and give it a quick pules or two. Add the coffee dissolved in the water and sweetener to the blender and blend until combined.
- Transfer the blended ingredients to the molds an freeze until hard- about three to four hours or overnight should work.
- To top with the melted chocolate (this is optional), remove the popsicles from their molds and place them on a baking sheet lined with parchment paper. In a microwave, melt the chocolate in a microwave safe cup or bowl, stopping to stir every 30 seconds until melted. Then drizzle the melted chocolate over the popsicles. Top with optional ingredients such as nuts or sprinkles.
- These popsicles should keep if frozen for up to two months in the freeze.
