    What you will need to make this Sugar Free Keto Chocolate Covered Coconut Candy

     

    • Sugar Free Powdered Sugar
    • Shredded or Flaked Unsweetened Coconut.
    • Sugar Free Condensed Milk
    • Sugar Free Chocolate Chips
    • Margarine or Coconut Oil- If you are using margarine it should be softened to room temperature.
    • Optional- Almonds or other nuts chopped for topping or to mix in with the coconut.

    How to Make Chocolate Covered Coconut Candy

    1. Start by mixing prepping a rimmed baking sheet with parchment or wax paper and set this aside while you work. In a large bowl combine together the sugar free powdered sugar, coconut, and condensed milk. When it gets too thick you can use your hands as needed.
    2. Use a scoop or large spoon to scoop out the balls, working each ball into a 1 to 1 ยฝ" ball. Place each of the balls on to the prepped baking sheet and then refrigerate the coconut balls for about a half hour or until firm.
    3. When you are ready to coat the balls, using a microwave safe bowl melt together the chocolate chips and margarine (or coconut oil). Microwave the ingredients stopping every 30 seconds to stir until the ingredients have melted together.
    4. To cover the balls in chocolate, simply use a fork or spoon to dip each individual ball into the chocolate and then place the ball back on to the baking sheet. Allow this to set.

    Tips for making the best chocolate coconut candy.

    Adding chopped nuts to the coconut is one way to add some flavor and texture.
    Another option is to add the chopped nuts on top just after coating the candy balls with the melted chocolate.

    1. Using a melon baller can be helpful when scooping and shaping the ingredients. Give the baller a quick spray of nonstick if things get stickie.
    2. If your hands get sticky when working to get the balls into shape, simply sprinkle some sugar free powdered sugar on your hands. You can also refrigerate the mix for a few minutes if it seems too mushy.

    How to store Chocolate Covered Coconut Candy.

    I like to store my candy in an airtight container or individually wrapped in the refrigerator. This candy can also be frozen if wrapped properly.
