Ingredients needed to make Sugar Free Cheesecake Brownies
For the brownie base layer.
- Almond Flour. Blanched almond flour works in this recipe.
- Cocoa Powder.. Use unsweetened cocoa powder.
- Granulated Erythritol. If needed, you can use another sugar alternative that measures like sugar and that can be baked with.
- Eggs. Your eggs should be at room temperature.
- Vanilla Extract. This really helps to balance out the flavors in this recipe.
- Butter. Your butter should be melted.
- Sugar Free Chocolate Chips. The chocolate chips should be melted according to the directions on the packaging.
Cheesecake layer.
- ย Cream Cheese. Full fat works best and the cream cheese should be softened to room temperature.
- Eggs. Your eggs should be at room temperature.
- Granulated Erythritol. If needed, you can use another sugar alternative that measures like sugar and that can be baked with.
- Vanilla Extract. Helps to balance out the flavors of the ingredients.
- Baking Powder. Will help to give the cheesecake layer a more fluffy texture.
For the blueberry swirl topping.
- Blueberries. Fresh or frozen blueberries can be used,
- Granulated Erythritol
- Water.
How to make Sugar Free Cheesecake Brownies
Preparation Time active time 40 minutes | baking time 30 minutes | chilling time 1 hour
For the base.
- Prepare a baking pan with parchment paper that hangs over the edges of the pan.
- Melt the chocolate as indicated on the packaging. Allow the chocolate to cool to room temperature.
- Meanwhile, beat the eggs in a small bowl and set the bowl aside. In a mixing bowl use a whisk to combine together the almond flour, baking powder, and unsweetened cocoa powder. Add the eggs, vanilla extract, and melted butter and mix until just combined. Lastly, fold in the melted chocolate. Evenly distribute this mixture to the prepared baking pan.
Cheesecake and Blueberry Swirl Layers.
- Next, make the cheesecake layer. Beat the cream cheese until soft and creamy. Add the sugar alternative and vanilla extract to the bowl and beat until combined. Lastly, add one at a time to the bowl, mixing between additions. Evenly distribute this over the chocolate base.
- For the blueberry layer, place the remaining ingredients (blueberries, remaining alternative, and water) in pot on medium heat. Use a wooden spoon to push down on the blueberries to release the juice from them. Simmer the ingredients until thickened (about 10-15 minutes).
- Use a large spoon to place dollops of the blueberry jam randomly on top of the cheesecake. Then use a toothpick or straw to create a swirl.
- To bake the brownies, preheat your oven to 350.
- Bake the brownies for 25-30 minutes or until the top of the cheesecake is set. (To test it, shake the tray to assure that the center is not jiggly.)
- Allow the cheesecake to continue setting and prevent cracking by turning off the oven and open the door for 20 minutes before taking the cheesecake out .
- Transfer the cheesecake to the refrigerate for at least 45 minutes to finish setting before serving.
