- Prepare. Start by placing your loaf pan into your freezer to get it cold while you work. Also, outfit your mixer with a whisk attachment.
- Beat. Use a whisk or fork to combine together your heavy whipping cream and vanilla extract in a large mixing bowl. Then beat the heavy whipping cream and vanilla on medium speed until stiff peaks form (about three to five minutes). The stiff peaks should be able to stand on their own
- Add Ingredients. Add your sugar free condensed milk, creamy peanut butter, and optional ingredients (such as crushed pretzels) to the mixing bowl. Reduce the mixer speed to low mix the ingredients until fully combined and smooth. Make sure there are no ribbons of unincorporated condensed milk.

Tips for making the best sugar free ice cream.
Whipping the heavy whipping cream into stiff peaks is crucial to the texture of the ice cream. If is not whipped enough the ice cream will be crumbly, rather than creamy, when you scoop it out for serving.
More helpful tips for you.
- It is important to use low speed on your mixer after you have added the other ingredients to the peaked whipping cream. This is because if your mixer has too much speed the air that you had just whipped into it can get knocked out, which will affect the consistency of your ice cream.
- I would not use natural peanut butter in this recipe as natural peanut butter tends to be 'runny'. Runny peanut butter will freeze harder than other peanut butters when used in ice cream.
- Refrigerating the mixing bowl and beaters, for as little as 20 minutes, before whipping the cream is also recommended. This will help with the structure of the stiff peaks.
How to store homemade peanut butter ice cream.
Leftover ice cream should be stored in an airtight freezer container such as an ice cream container. If properly stored, this ice cream should keep for up to a couple of months before ice crystals begin to form.
