Ingredients needed to make Valentine's Day Macarons
- Almond Flour. Extra-fine is recommended.
- Sugar Free Powdered Sugar. Used to make the meringue shell.
- Egg Whites. Your egg whites should be at room temperature.
- Granulated Sugar Alternative. Use a sugar alternative that measures 1:1 with sugar. Also, running this through a food process is recommended to make it more fine.
- Vanilla Extract. Added to help balance the flavors.
- Cream of Tartar. An essential ingredient for the meringue shells.
- Food Coloring. Mine were made with red coloring.
- For the filling you will need Sugar Free Powdered Sugar, butter (softened to room temperature), vanilla extract, and milk (two to three tablespoons as needed).
- Lastly, while you can make your own heart via piping, a heart template can make your piping easier.
Expert Tip ๐ You can make the hearts via freestyle piping or use a template (placed under the parchment paper and then removed before baking).

How to make Sugar Free Valentines Day Macarons
- Start by sifting the almond flour and powdered sugar into a medium bowl. A food processor can also be used to get these into a very fine consistency. ( The more you do this step, the glossier the top of the macaron will be). Also, line two baking sheets with parchment paper.
- In a clean mixing bowl and a mixer fitted with a clean whisk attachment, beat the egg whites until frothy ( about five minutes) and then add cream of tartar and beat for another minute.
- Slowly add the granulated sugar alternative. Do this one tablespoon at a time, while continuing to beat the ingredients. You can add the food coloring (four to five drops) at this time and continue to beat the ingredients until stiff peaks form. The batter should appear to be stiff enough to hold its own if it were to be dropped.
- Next, fold in the almond flour mixture from the first bowl, adding a third at a time, until all of ingredients have been combined.
- Transfer the meringue to a piping bag fitted with a small round tip. Pipe 1โ macarons onto your baking sheet, leaving plenty of room between each.
- Hold each individual tray a few inches off the counter and drop it straight down to release any air bubbles. You may need to repeat this a few times to release the larger bubbles.
- Set the macarons aside to rest for 20-30 minutes or until a skin has formed. While the macarons rest, preheat your oven to 300F (recommended that you use an oven thermometer).
- Bake the macarons, one tray at a time, on the middle rack. Bake for 12-14 minutes, turning the tray halfway through baking.
How to Assemble the Macarons.
- Remove the cookies from the oven and let cool on the baking sheet for 10 minutes before transferring them to a cooling rack to fully cool.
- To make the center filling beat the softened butter until fluffy. Then add the vanilla and the powdered sugar and continue beating until mixed. You can add milk as needed for consistency.

- The secret to making a good macaron has a lot to do with the consistency of the almond flour. As a result, it is recommended that you use fine almond flour, it is a good idea to process it up to a few cycles in a food processor.
- Make your egg whites even better for this recipe by separating the eggs two days ahead of making this recipe and refrigerating them covered in a bowl. Allow the egg whites to get to room temperature before adding them to this recipe.
- It is essential that you use a clean bowl and beaters (or whisk attachment) to make this recipe. Objects, such as fat, that are on the bowl or beaters can negatively affect these cookies.
- Lastly, to get these macarons in a heart shape there is a step that involves piping them into shape. While piping the batter is a normal step in making macarons, you are welcome to do any shape of your choice.
