    • Cream of Tartar.

    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

    How to make homemade Cloud Bread.

    Yields 8 cloud pieces of bread.
    Preparation Time active time 15 minutes | baking time 20 minutes.

    • Preheat your oven to 300. Prep two rimmed baking sheets for nonstick. I like to use parchment paper that has been lightly sprayed with nonstick for a recipe like this one as the bread can be 'sticky'.
    • Separate your eggs by placing the yolks in a large bowl and the whites in a mixing bowl.
    • Beat the egg whites with the cream of tartar until stiff peaks form (about two to three minutes).
    • In the bowl with the egg yolks, cream together the egg yolks with the softened cream cheese until smooth.
    • For the next step, we will carefully fold in the egg white with the egg yolk mixture. Do this by folind in about a third of the egg whites at a time. Since over-folding can deflate the egg whites, simply fold each addition only a couple of times.
    • Scoop out about two tablespoons each of the mixture on to the prepared baking sheets. Leave a couple of inches between each of the scoops to allow for expansion.
    • Bake the bread for 20-25 minutes or until the edges turn golden brown. Then allow the bread to cool for a couple on minutes on the baking sheets before transferring to a cooling rack.

    Expert Tip ๐Ÿ‘‰ Towards the end of baking, cloud bread tends to bake faster. It is a good idea to keep an eye on them, without opening the oven door if possible, during the last few minutes of baking.

    Tips for making the best cloud bread.

    This bread recipe is most successful when the cream of tartar and egg whites are beaten until stiff peaks form to help insure that there is enough air introduced to the bread. You can test for soft peaks gently sticking a spoon into the mixture and then pulling it out. A stiff peak should form when it is ready.

    More helpful tips for you.

    1. When folding the ingredients together, do this as gently as possible. This is to prevent deflating the air that you have introduced while beating the egg whites.
    2. During the last five minutes or so of baking keep and eye on the cloud bread. This bread can easily over-bake during the final few minutes.
    3. Allow the cloud bread to sit on the baking sheets before transferring to a wire rack to cool. This will help the bottom of the bread set.

    How to store cloud bread.

    This bread is really best when eaten as soon as possible as the taste can go down hill after about eight hours.
    The good news is that this cloud bread can be frozen in an airtight container.
