    What makes cheesecake bars so good?

    Cheesecake bars feature a luxurious creamy filling on top of a buttery crumbly crust, for the perfect balance of sweet and tangy flavors and creamy and crunchy textures.

    I like that these cheesecake bars have even more flavor when fruit is added on top.ย

    This cheesecake recipe however, is a no-bake recipe that is cut into bars.

    What you need to make cheesecake bars with no added sugar.

    Crust

    • Almond Flour
    • Butter
    • Powdered Sugar Alternative

     


    ย 

    Filling

    • Cream Cheese- softened to room temperature.
    • Powdered Sugar Alternative
    • Sour Cream
    • Vanilla Extract
    • Lime Juice
    • Optional topping 1 ยฝ cup fresh or frozen mixed berries+ 1 tablespoon of sugar alternative (such as monk fruit).

    How to make Cheesecake Bars.

     

    1. For the crust, prep a square baking pan for nonstick (I use parchment paper). In a medium bowl, mix the ingredients until just combined and then transfer the mixture to the prepped pan, pressing it in as needed. Refrigerate the crust to allow it to harden.
    2. In a mixing bowl, beat together the cream cheese, sweetener, and sour cream until smooth. Then stir in the lime juice.
    3. Transfer the blended ingredients to the prepared crust, evenly spreading the mixture over the crust. Refrigerate the cheesecake until firm, about four hours.
    4. To make the topping, combine the berries and sugar alternative in a saucepan over medium heat and stir until thickened.

    Tips for making the best cheesecake bars.

    This is a recipe that uses cream cheese as a main ingredient.
    For best results, please have the cream cheese softened to room temperature.

    1. This recipe has an almond flour crust. You can make the crust in advance if you desire.
    2. Fresh fruit is used as an optional topping for this bar recipe. You can use frozen fruit instead.
    3. The fruit topping is made into a jam before topping the cheesecake bars. You can simply use a sugar free jam instead to top your bars with.
