Ingredients needed to make coconut cookies.
- Coconut Flour - Coconut flour does not measure like other flours which means that you should not substitute for the coconut flour
- Sugar free sweetener- Use a liquid no added sugar sweetener for this recipe.
- Butter- Softened to room temperature.
- Eggs-Room temperature
- Optional ingredients add-ins such as shredded coconut, sugar free chocolate chips, or chopped nuts.
How to make Sugar Free Coconut Cookies
- Preheat your oven to 325 and prep your baking sheets. I use parchment paper..
- Place the coconut flour in a mixing bowl and use a whisk to fluff or stir it. then stir in the sweetener and the melted butter.
- Add the eggs one at a time, stirring gently between additions.
- When the cookie dough has formed, use a cookie scoop to scoop the individual cookies and the place them on to the prepared baking sheet, leaving room between the cookies. Then use a the back of a spoon or your hand to gently press the cookies flat.
- Bake the cookies for 10 minutes and then rotate the cookie sheets. Contintue to bake until the edges begin to brown.
- Allow the cookies to sit on the baking sheet for about ten minutes before transferring them to a cooling rack.

I love your recipes and have tried several. My son is a type 1 diabetic and so I look for recipe that is sugar free. This recipe calls for milk which has a lot of sugar. Do you know if I could substitute almond milk? Thanks again.
