This recipe works best using a full fat cheddar cheese. You can use a sharp or extra sharp variety however for more flavor.

- Personalizing your crackers with seasoning can make them taste even better. Taco, Bacon, or Italian seasonings are ideas.
- Lastly, while my crackers are in the shape of a goldfish, you can use another shape for variety. You can find ideas for small cutters here.

These crackers should be stored in an airtight container. While they should keep for up to five days, you can try baking them for a few minutes as needed to crispin them up.

This is a simple recipe for homemade crackers that is based upon a popular snack.
We will first make the dough for this recipe and then cut out the fish shapes before baking them.
This recipe is a low carbohydrate recipe as well.
Instead of regular flour, we are using almond flour. Also, we are using cheddar cheese for flavor and structure of the crackers.
Ingredients needed to make keto cheddar goldfish crackers.
- Cheddar Cheese. You can use regular, sharp or extra sharp as desired. The cheese should be shredded.
- Almond Flour. Use almond flour rather than almond meal for best results.
- Xanthan Gum. Added to help hold the ingredients together as there is no added gluten.
- Seasonings- such as paprika, onion powder, garlic powder, and salt. (one to two teaspoons total).
- Butter. Cold butter is used to make the crackers cripier.
- Water. Use to thin out the dough so that we can work with it.
Prep: 30 mins
Freeze time: 15 min
Bake: 12-15 min
Total: 60 min
Yield: 100 crackers (amount depends on the size of the cutter used).

- Place your shredded cheese, almond flour, xanthan gum, seasonings, and butter in a food processor and process until a dough forms. You can add up to a tablespoon of cold water to thin out the dough as needed.
- Wrap the dough in plastic wrap and freeze for 15 minutes.
- Preheat your oven to 350 and line two rimmed baking sheets with parchment paper.
- Divide the dough in half and roll out the first half on a clean surface or parchment paper or a mat that can be used to transfer the crackers to the baking sheet for baking. Then cut out the shapes.
- Bake the crackers for 12- 15 minutes or until crisp and golden. Meanwhile, repeat this process with the second baking sheet using the remaining dough.
- Allow the crackers to cool for at least 15 minutes before enjoying.
