A while back I posted a Key Lime Pie recipe.
It’s hard to enjoy a pie if you are someone who is on a sugar free and/or low carb diet. That’s because the crust usually has sugar in it. Many of us also like to get a bit of help and get a ready made pie crust to help us out. I have yet to find a sugar free or low carb version of a ready made pie crust.
So, I make my own pie crust.
How to Make a Sugar Free Pie Crust
There are two ways to go about making a sugar free pie crust.
This method is the sugar free recipe that resembles the graham cracker crust pie crust that is so popular.
Since this pie crust is part of a holiday dessert, and because I have A LOT of sugar free cookies to use up, I am going to make the cookie method and save the sugar free traditional crust recipe for another day.
That’s right- sugar free cookies.
I have a lot of cookies to use up so this works great for me.

GLUTEN FREE CHOICES
You will need to place your cookies in a plastic bag to crush into crumbs.
You could use a food processor but, I think the clean-up is a lot easier with a zip top baggie.
What kind of pie you intend to make has a lot to do with the kind of cookies that you use for your crust.
I’m making a sugar free low carb vanilla cheese cake that is a bit bland so a chocolate chip cookie crust will work best for me. I do something with a peanut butter taste. A pie that is intense probably would not go well with an intense crust such as this one.
This recipe is for a 9 inch pie dish.
- 1 1/2 Cups Sugar Free or Gluten Free Cookie Crumbles
- 1/3 Cup Equivalent Sugar Alternative
- 6 Tablespoons- there are 8 in a stick Melted Butter
