I truly believe that one of the best things about summer is the wonderful bounty of fresh fruit.
When we see all of the colorful fruit in the produce department, we know it is summer. I love that the fruit is not only at good prices, it is also a good quality.
Something else that I like about the fruit would be the colors of the fruit itself.
I do not know if it was meant to be but, the patriotic colors of the fruit certainly does have good timing. Don’t you think? The red and blue colors of fruit, such as strawberries and blueberries, peak at the same time that we are making patriotic-inspired creations. This would be one of those creations as well.
Greek Yogurt is something that I always have on hand.
I love that the Greek Yogurt I use is low in fat, high in protein, and is low in calories. The best part however, is that my yogurt is so filling too!
Greek yogurt adds the white to recipes such as this one.
As mentioned, the fruit brings us patriotic colors. We get the blue from the blueberries and we get the red from strawberries. Hence, we get a patriotic color pallet. This is something else that I like about this 4 Ingredient Summer Parfait Recipe.
It is the fruit that adds any sugar to this recipe.
The sugar that is added is a natural sugar. If you would like to cut down on any and all sugar, you could easily cut down on the amount of fruit that you add to this. We will be adding a bit of sweetener to the yogurt to balance out what some people think is a ‘tartness’ that Greek Yogurt has to it. You can use the sugar alternative of your choice which could be honey or even Agave.
This recipe has four ingredients
I have already mentioned three of the four ingredients that we will be using in this recipe. However, there is a fourth ingredient as well. As with similar parfaits that are out there, this one will be topped with a bit of granola. But, we know that most granola has sugar added to it (I never really got this..). I have found sugar free or low sugar granola available on Amazon. If you do not mind some sugar in your granola, I suggest looking for a honey sweetened one if you appreciate natural sweetness.Hence, you can keep this low in sugar that is added.
4 Ingredient Summer Parfait Recipe
What you will need to make this 4 Ingredient Summer Parfait Recipe
- Greek Yogurt- low fat/lowest sugar preferred- 24 ounces
- Sugar Alternative- 4 teaspoons of equivalent, can use honey or agava
- Granola- 1 Cup – see post for sugar free choices
- Seasonal Fruit- 2 cups total
How to make this:
- Place four parfait cups/glasses into the refrigerator to get cool as you assemble your ingredients.
- In a mixing bowl, whisk together the Greek Yogurt and sweetener of your choice. Set aside
- Remove the cups/glasses from the refrigerator to begin.
- Place about a tablespoon of fruit in the bottom of each container.
- Layer 1/2 cup of Greek Yogurt over the fruit.
- Place the remaining fruit over the yogurt.
- Top the fruit with 1/4 cup of yogurt and then sprinkle your granola over this yogurt layer.
Tip: Make this in advance, refrigerate it until ready to use, and add the granola prior to serving.
Some folks say that a yogurt parfait is all about the layering.
However, I say that the amount of layers that you use in your parfait has a lot to do with how big of a cup or glass or other kind of container you are using. Thus, part of the fun of eating a parfait has something to do with what you are serving it in. Do you agree?
I love enjoying a yogurt parfait for breakfast. However, if I miss my yogurt parfait breakfast then I will enjoy it later on in the day for a meal or a snack.
I love that a yogurt parfait has natural sugar that comes from the fruit that I have included in it. The yogurt provided me with protein, which is nice because I am not a big meat eater.
