Grilled Chili Lime Eggplant
When you are tired of seeing the usual hot dogs, chicken, etc on the grill it is time to try something new.
At least that is the case on my patio. I like to introduce something a different to the usual grilling mix.
When I was at the store the other day, I noticed that they had just gotten in some fresh eggplants.
This gave me the idea that I should try to grill sliced eggplant on the grill. By the way, you can enjoy grilled eggplant as the main course or on the side.
I have a thing for Trader Joe's Seasonings.
In the case of this recipe, I will be more specific in saying the chili lime seasoning from Trader Joe's. And since I live in a town that has no Trader Joe I find seasonings such as this one online. Unfortunately, I like those Trader Joe chili lime almonds as well. However, you can use other kinds of chili lime seasoning as well.

The recipe for Grilled Chili Lime Eggplant
What you will need to make this Grilled Chili Lime Eggplant
- Eggplant- 1 2-3 pound eggplant. Slice the eggplant into ½" slices.
- Olive Oil- ¼ cup plus additional for grill prep.
- Lime- 1 juiced- about 2 tablespoons juice needed.
- Chili Lime Seasoning- 3 teaspoons. Can use just a chili seasoning if that is all you have.
- Optional toppings for visual and taste such as cilantro, red pepper etc.
How to make Grilled Chili Lime Eggplant
- Prep your grill grate with brushed olive oil or preferred method on nonstick. Then heat the grill to a medium heat.
- Brush one side of the eggplant with oil and season it. Then place this side down on the grill and brush and season the other side.
- Cook the eggplant for about two minutes and flip the slice over and cook for another 2-3 minutes or until the eggplant appears to be tender.
- Remove from the grill and season to taste with leftover seasoning. Add any optional toppings.
