I love a variety of salads to choose from which is why I like this Sugar Free Balsamic Tomato and Mozzarella Salad
Tomatoes and mozzarella are a most enjoyable duo especially when put together in a salad.
Sugar Free Balsamic Tomato and Mozzarella Salad
This is especially a great salad for anyone who enjoys cheese like I do.
I am a huge fan of cheese. Like many people living in the mid west, I grew up thinking that mozzarella cheese was that grated white cheese that went on top of a pizza. It wasn’t until I was on a ethnic food tasting tour in New York City that I learned how to appreciate Mozzarella cheese.
There really is no taste like the taste of fresh mozzarella done right.
Tasting the fresh stuff, rather than the convenient packages that we find at the grocery store, is a great experience. However, some people will argue that fresh mozzarella is a completely different cheese from it’s counterpart. This could be a subjective review however, I am standing by it.
There is more to this salad than just fresh mozzarella.
Tomatoes are pretty important too. And when it comes to the best tomato to pair with this cheese, there really are few that work optimally, in my opinion. My choice of tomato is the plum or Roma tomato. I enjoy the rich tomato taste of the Roma tomato when it meets the deep cheesy taste of mozzarella. However, you can also choose to use a cherry tomato or heirloom tomato in this recipe.
Basil is the essential herb that is used in just about every kind of mozzarella-tomato marriage.
If you are serving your mozzarella and tomatoes as slices, you can get away with chopped basil or even basil that has been dried that is sprinkled over the food. However, in a salad, the basil should be in a fresh leaf form as this is part of the great overall taste of the salad.
I will also use a variety of other lettuce choices to pair with the basil.
These choices can be used in a small amount as they will simply add balance to the salad in looks and taste. Using a prepackaged variety salad is an easy way to do this. Look for something that contains darker leaves such as spinach.
Lastly, we have the Balsamic Dressing that has no added sugar.
Who would have thought that the average balsamic dressing has sugar in it? This is why I make my own.
To make this dressing you will need balsamic vinegar- which you can find on Amazon .You will also need olive oil- I prefer the extra virgin. Lastly, we will use a sugar substitute such as Coconut Palm Sugar- also available on Amazon or Splenda is needed as well.
You can also use a cherry tomato or heirloom tomato in this recipe.
- Tomatoes- 4-6 Roma or 1 pint Cherry Tomatoes
- Mozzarella -Small balls or chunks 1 lb -fresh as possible
- Basil leaves-1 cup shredded
- Dark lettuce such as spinach leaves- 1/2 cup shredded
- Balsamic Vinegar -1/4 cup
- Coconut Palm sugar or other alternative-2 tsp
- Garlic–1 clove minced
- optional seasonings to taste Salt and Pepper
Place your tomatoes in a shallow bowl, add your tomatoes and then place your lettuce and basil leaves within them.
Sprinkle your dressing over the mixed tomatoes and cheese. If desired, sprinkle additional seasoning over this for taste.
