In order to have bread that is low in carbs, we will need to make our own biscuits.

There are a few items that you will need for this recipe.

There are also a few ingredients that you will need for this.

The recipe for Sugar Free Low Carb Monkey Bread

As mentioned, you will need to make, but not bake, low carb biscuits with the recipe here. You will also need a Brown Sugar Alternative such as this one. Lastly, you will need ground cinnamon that has no sugar added to it.
 

What you will need to make this Sugar Free Low Carb Monkey Bread
Make this in a Bundt Pan such as this one. or you could use a Cast Iron Skillet.
 

  • Low Carb Biscuits (with the recipe here). - 2 batches. Use 1 ½ batches for a more 'covered' batch of Monkey Bread or use the full two batches for less covered biscuits. Do not bake the biscuits. Simply make the biscuit dough.
  • White Sugar Alternative- ¾ cups. I use granular that is 1:1 equivalent to sugar.
  • Ground Cinnamon with no added sugar- 2 teaspoons.
  • Butter- 2 sticks / 1 cup.
  • Brown Sugar Alternative- ¾ cups.
  • Optional- chopped nuts ¾ -1 cup.

How to make Sugar Free Low Carb Monkey Bread

 

  • Preheat your oven to 325. Prep, greasing works best, your pan for nonstick.
  • In a one gallon zip top bag, combing your white sugar alternative with the cinnamon. Set this aside.
  • We will now make the actual bread pieces. One method is to roll the dough out, use a cookie cutter to cut out large circles and then cut those circles into quarters. Or, you could simply pinch clumps of the dough away from the dough itself and use those. I guess it all depends on your desired looks of the end product itself.
  • Take 3-4 (depending on size) of the dough pieces and place them into the zip top bag with the sugar mixture. Shake the ingredients over the dough to cover the dough pieces and then transfer them to the prepped baking pan that you are using to bake these in. Cover the dough pieces with any optional nuts at this point.
  • Next, in a saucepan on medium heat, melt together the butter and brown sugar alternative stirring as you go. When it begins to bubble remove from heat and pour this over the dough in the pan.
  • Bake this for 35-45 minutes or until this begins to brown. Allow this to cool 5-10 minutes. To serve, place a large plate of the top of the pan and turn the monkey bread upside down over the plate. Allow folks to pull of pieces to eat.

  • ¾ cup Splenda
  • 2 tsp Ground Cinnamon
